The function Update CF card reads out data that have not yet been
read out. After read-out, the data will be marked as read in the
instrument, but not deleted.

The function Backup CF card reads out all the data from the
internal memory, including those that had already been read out.
After read-out, the data are not marked as read in the recorder.

This means that they remain available for the function CF card
!
Update. The function Backup CF card is therefore ideal for test
and service work.
