Use of the lasagne rollers

If you want to prepare lasagne you can use only the base with lasagne rollers. It is not necessary to use the double rollers.

  1. Turn the regulator for the dough thickness counter-clockwise (Fig. 9). Towards "1" for a thicker dough.
  2. Introduce between the lasagne rollers the dough previously prepared. Activate the motor or turn the crack handle clockwise to make the rollers turn. You will obtain a first dough sheet. If possible work the dough with both hands, hold the dough as stretched as possible, while you insert it and pull it out from the lasagne rollers.
  3. Fold the dough in two. Dust the dough with flour. Roll out the dough again. Repeat the operation till you will have a uniform dough sheet.
  4. To reduce the thickness of the dough you must reduce the distance between the rollers. Turn the regulator for the dough thickness clockwise. Towards "9" for a thinner dough.
  5. Roll out the dough for several times, flouring it every time, till you will obtain the desired thickness.

For an optimal result we suggest you to dust the dough with flour on each side every time.

Use the double rollers

Before cutting the dough with the double rollers for pappardelle and fettuccine or for tagliatelle and tagliolini you need to roll out the dough. Use the lasagne rollers to roll out the dough.
After making the dough sheets with the lasagne rollers you can cut the dough in the desired pasta format.

  3. Insert the motor or the crack handle in the hole of the desired roller.
  4. If you insert the motor in the external hole of the rollers, it does not need to be fitted in the bracket.
  5. Put an end of the dough sheet on the roller and activate the motor or turn the crack handle clockwise.

After using

  1. At the end of each use unhook the motor from the support bracket. Pull out the drive shaft or the crack handle from the hole of the lasagne rollers or from one of the holes of the other rollers.
