foaming Milk
The Xenia has a steam wand with two narrow nozzles at the end.
By pressing the toggle lever either upward of downward to enable steam out
of the steam wand. The locking of the lever is intentional, so you can create
milk foam freehand.

For correct milk foaming hold the steam wand diagonally into the milk just
below the surface (about 0.25 l for a 0.5 liter jug). Since the Xenia has no rigid
steam wand, that's pretty easy. The goal is to mix only slightly sipping air under
the milk when frothing.
When foaming milk, the milk turns inside the jug.
Since the volume of the milk increases, you have to
carry the steam wand very slightly upwards during
the foaming process.
When the jug gets too hot to hold in the palm of
your hand, it is time to that you turn off the steam.
With the Xenia you can simultaneously extract espresso and foam milk. If there
is enough time, we recommend that you first perform the espresso extraction
and then do the milk frothing, so that both processes do not influence each
other thermally.
Caution:
Steam is very hot and you have to make sure that you open the valve only
when the nozzle is immersed in milk so that you or other people cannot
burn yourself.
The valve, steam wand and nozzle can become very hot despite
insulation and handles.
Immediately clean the steam wand after use, otherwise the milk will
become sticky and difficult to remove.
