■ Principle
■ Measuring the starch damage rate of a flour provides information
on the flour baking capability. This allows to offset problems that
may arise during the process.
■ The SDmatic from Chopin is designed to measure the following in
less than 10 minutes and with a single test:
- the starch damage rate of the flour in A
in UCD (Chopin Dubois Unit),
- the iodine absorption speed, giving information on the hardness of
the milled wheat.
■ The SDmatic works on the Medcalf and Gilles principle (1965) to
measure the starch damage rate of a flour. This amperometric
method consists in measuring the amount of iodine absorbed by the
starch granules in a solution at a temperature of 35°C.
■ The SDmatic produces the necessary amount of iodine,
proportional to the mass of tested flour, then the apparatus
measures the amount of iodine absorbed by the flour in order to
determine the starch damage rate.
