INTENDED USE OF THE MACHINE

CORRECT USE OF THE MACHINE
The machine is intended to be used by qualified personnel for the production and handling of flours and
doughs, more specifically in pastry and baking workshops.
This machine is a planetary dough mixer: It is used to knead and mix any type of dough for making pastries
(cream fillings, cream, dough, etc.). The mixing is obtained by using the interchangeable tools provided with
the machine with planetary rotational movement. These tools have different shapes and, hence, are used for
different purposes.
MACHINE PERFORMANCE
The oil-bath geared motor enables a maximum power of the machine with the possibility of mixing even when
the tank is full.
Instead, for making doughs for bread, pizza, or something similar, the level of 1/3 (one third) of the capacity of
the tank must never be exceeded and the dough must have a water/flour ratio of 50%.
In any case, respect the data indicated in the RECOMMENDED DOSES table in FIG. 5.
INCORRECT USE OF THE MACHINE
The machine was designed only for the intended uses described in the previous paragraphs.
Any other use may cause damage to the machine and/or lead to a dangerous situation for which the
manufacturer cannot be held responsible.
In particular, it is not allowed to work with other types of materials (food or otherwise) that do not
correspond to the requirements described above.

TECHNICAL DESCRIPTION

All the technical data are indicated in the table in FIG. 6.
PURPOSE
Mixing, beating, and amalgamating ingredients in order to obtain doughs for pastries and small batches of
bread dough.
WORK CYCLE
Loading ingredients: Loaded manually by the operator, who introduces the ingredients into the bowl.
Unloading dough: Unloaded manually by the operator who removes the bowl and deposits the dough in a
specific place.
Operation: Operations entrusted to personnel during normal use of the machine are: starting up, regulation,
loading, unloading and stopping of a process that can be either manual or automatic.
CONSTRUCTION
Support structure: Supports all the parts that work together to process the dough.
Motorization: The machine is driven by an assembly consisting of belts and oil-bathed gears and pulleys,
which conveys the rotatory motion to the mixing unit.
Mixing unit: The set of containment and mixing parts directly involved in processing the dough.
Bowl support: Support and positioning system of the bowl, with loading/unloading the ingredients.
Electrical system: Electrical energy main switchboard and distribution panel.
Control panel: Control, setting, and production control panel.
