STUFFED ROASTED PEPPERS

These hearty peppers can also be served as a main course .

MASHED POTATOES

Makes 7½ (1.7 L) cups, fifteen ½-cup (125 ml) servings

Place the potatoes in a large saucepan and cover with water.
