Bread/rolls/bread mixes

Important:
With all Bread/rolls/bread mix Auto-
matic programmes, place the dough
in the oven straight away and start
the programme (do not prove the
dough first). The automatic
programmes incorporate both
proving and baking phases.
Bread/rolls
– Make sure that any liquids are only
lukewarm (30–35 °C).
– Knead the dough until it is elastic.
– When baking bread in a tin make
sure that the surface is smooth with
no cracks or folds.
– Grease the tin if you are going to use
one to bake the bread in.
– If the bread is not going to be
removed from the oven as soon as
baking is finished, select a lighter
level of browning to prevent the
bread becoming too brown.

Bread mixes
– Prepare the dough according to the
instructions on the packet.
– Bake all bread made from bread
mixes in a greased loaf tin
(25 x 10 cm).
– Make an incision in the dough and
brush it with a little water before you
place it in the oven.
– If the bread is not going to be
removed from the oven as soon as
baking is finished, select a lighter
level of browning to prevent the
bread becoming too brown.
Bread mixes are available from various
manufacturers. The Automatic
programmes have not been developed
for any specific mixes. For this reason
browning, proving and texture can vary.
If necessary, leave the bread in the
oven for a bit longer or select a different
level of browning the next time.
