Jansson's bake (from Sweden)

Serves 4
800-850 g peeled potatoes
1 onion, finely sliced
1 tbsp butter
125 g anchovy fillets
200 ml double cream
2 tbsp breadcrumbs
Method:
1. Cut the potatoes into fine
matchsticks, or grate very coarsely
using a large-holed grater. Grease an
oven-proof dish.
2. Layer the potatoes, anchovies and
sliced onions in the dish, starting and
finishing with a layer of potatoes. Pour
the cream over, and sprinkle with bread
crumbs.
3. Place in the oven to bake.
4. Cover with aluminium foil after 30
minutes to prevent the top from getting
too brown.
