8.6 FOOD PRODUCTS ARE NOT COOKING PROPERLY:
A difference between setpoint and
actual temperature is suspected.
1. Which controller is installed on the
fryer?
a. Solid State (Analog) Controller - see
calibration procedures found in section
5.3 Thermostat Calibration, page 12.
b. Computer Magic III - continue with step 2
below.
2. Computer Magic III Temperature
Checks:
a. Press computer ON/OFF switch ON and
select a cooking program.
b. Run the fryer for approximately 30
minutes to allow shortening to stabilize at
setpoint temperature.
c. Place a quality thermometer or pyrometer
within 1"(22 mm) of the temp probe in
the fry vessel. Check actual temperature
of oil by reading the thermometer.
d. Check computer temperature readings by
pressing the computer temp switch once
to read "actual" temp and then press
computer temp switch a second time to
verify computer programmed setpoint
temperature.
3. Is the temperature reading from the
thermometer within ± 10°F (5°C) of
the computer displayed actual
temperature?
a. YES - system is maintaining temperature
properly. If problem persists, review
cooking procedures, i.e. use lower
cooking temperatures or change cooking
times.
b. NO - Possible faulty probe circuit.
