Installation and Operation of: PBC-6/18M INTRODUCTION The Duke PBC (Proofer Baking Center) with Touch Screen Control was developed in response to Customer’s need for uniform baking capabilities and to provide consistently high, quality just-baked product. The Duke Proofer Baking Center utilizes Duke’s unique directional convection airflow technology that provides even heat distribution and a uniform bake without the need for turning pans during the bake cycle.
