Prep Time: 10-12 minutes • Cook Time: 20-25 minutes • Serves:
Ingredients:
1¼ cups all-purpose flour
1½ teaspoon baking powder
1 teaspoon salt
4 tablespoons unsalted butter, softened
Directions:
1.
In a medium bowl, combine flour, baking powder, and salt.

In a large bowl, beat butter and sugar with a handheld mixer on medium until fluffy
and light. Add egg, milk, vanilla, and blend until mixed. Using slow speed, mix dry
ingredients into the wet ingredients until just combined. Small lumps are okay.
3.
Add 1 tablespoon of batter into each cupcake mold of the preheated Mini Cupcake
Maker and cook for 2-3 minutes.
4.
Carefully remove the cupcakes using the Easy-Lift Tray and allow them to cool.
5.
Top with frosting of your choice (see pages 27-29) and enjoy this favorite that's anything
but basic!
