The Background to Cooking by Convection.
As well as being a microwave oven, your new cooker also allows you to cook by convection and by
grilling.
ab] Convection cooking techniques
A convection oven differs from an ordinary
oven in that most of the heating element is
actually outside the oven cavity. This means
that all the space in the oven is available for
you to use. A high speed fan blows hot air
from around the heat source and into the oven
cavity so that the food starts cooking as soon
as the oven is turned on. Because the air is
being blown around, cooler air is removed
from around the food so that it actually heats
up quicker and excessive hot air doesn't collect
at the top of the oven.
You should use convection cooking for baking
small items which need to be browned and
crisp on the outside, such as buns, biscuits,
scones, pastries and souffles.
Convection cooking utensils
When you cook by convection alone you can
use the turntable, conventional roasting tins,
cake tins, oven to table ware, foil containers,
pizza pans and paper board containers suitable
for use in the oven.

3) Converting recipes
When you cook by convection it is similar to
conventional roasting and baking. However,
because the oven heats up quicker and is the
same temperature throughout, foods will be
evenly browned.
Because of this and also
because of the turntable, you will not need to
re-arrange food during cooking. At the end
of the cooking time, test to see if the food is
done, before removing it from the oven, and
if not, leave it to stand in the oven for a few
minutes to finish off.
Other points to remember include :
temperature - because of the efficiency of the
convection
system
you should
reduce the
cooking temperature when you are using your
own recipes. You will find more advice in the
attached SHARP cookery book which contains
special recipes designed for use in the oven.
preheating - this is not necessary but you may
preheat the oven if you wish.
position in the oven - if you are cooking one
item, put it on the low rack on the turntable
close to the door. If you are cooking two items
you can use both the racks which are supplied
as you would shelves in an ordinary oven. Do
not cover the racks with foil as this interferes
with the air flow.
