Henny Penny F5/ LOV 300 Open Fryer Electrical Requirements Shock Hazard This unit must be adequately and safely grounded (earthed) or electrical shock could result. Refer to local electrical codes for correct grounding (earthing) procedures or in absence of local codes, with The National Electrical Code, ANSI/NFPA No.

Henny Penny F5/ LOV 300Open Fryer Cable Restraint Secure I-bolt to building using acceptable building construction practices. Permanently connected electric fryers with casters must be installed with flexible conduit and a cable restraint, when installed in the United States. Holes are available in the rear fryer frame for securing the cable restraint to the fryer.
Henny Penny F5/ LOV 300 Open Fryer require a minimum wire size of 6 mm to be wired to the terminal block. It is recommended that a 30 mA rated protective device such as a residual current circuit breaker (RCCB) or ground fault circuit interrupter (GFCI) be used on the fryer circuit.
Henny Penny F5/ LOV 300 Open Fryer MAP System Theory of Operation Purpose The F5 Modular Architecture Platform (MAP) system allows for control of printed circuit boards (PCBs) responsible for each of the fryer's sub-systems. MAP allows the fryer sub-systems to integrate for more effective operation and communication.

Henny Penny F5/ LOV 300 Open Fryer Control Theory of Operation Purpose The F5 touch screen control panel provides an operator or technician the fryer's user interface (UI). The F5 control also stores cooking programs and settings for the fryer's operation. One con- trol panel will be present per well which consists of a single full vat or dual split vats.

Henny Penny F5/ LOV 300 Open Fryer Control/MAP System Sequence of Operation During fryer operation, the F5 MAP system is continually sending and receiving status messages for system components via the CAN bus. User initiated commands are received by the F5 touch- screen control and then sent as a CAN message packet to the appropriate device.
Henny Penny F5/ LOV 300Open Fryer Power Distribution PCB Purpose Line AC voltage is supplied to the F5 fryer from the power cord and then converted to 24 volts DC by four separate power supplies. Four power supplies then independently feed 24 volts DC to the Power Distribution PCB which is used to operate all of the MAP system electronic components.

Henny Penny F5/ LOV 300Open Fryer Power Modulation Unit (PMU)/High Limit PCB PMU Purpose Control of the electric heat system for each vat is handled by a PMU that is powered by 24 volts DC from the Power Distribution PCB. Incoming to the PMU are main and level resistance tem- perature detector (RTD) probe resistances for the respective vat.
Henny Penny F5/ LOV 300 Open Fryer High Limit PCB Purpose Monitoring of each vat's high limit safety circuit is handled by the High Limit PCB. Power for the high limit PCB is supplied by 24 volts DC from the Power Distribution PCB through its connection to the PMU.

Henny Penny F5/ LOV 300Open Fryer Electric Heat System Theory of Operation Purpose The F5 electric heat system uses electrical power applied through a heating element to raise the cooking oil temperature when demanded by a user and the control system. Incoming to the elec- tric heat system is three-phase electrical power, safety circuit checks, and temperature probe readings.

Henny Penny F5/ LOV 300 Open Fryer Electric Heat System Sequence of Operation Electric Heat Safety Circuits User initiated control commands to preheat the oil or to start a product cook cycle create a demand for the F5 fryer's electric heat system. Before heat can be applied, the control system checks the electronic fuse, high limit, and heating element tilt switch safety circuits to ensure they are closed.

Henny Penny F5/ LOV 300Open Fryer it reaches the exit point of 180°F (82°C). Afterwards, constant heating of the oil is performed up to the set point. Preheat mode is not available if the oil temperature is above 180°F (82°C).
Henny Penny F5/ LOV 300 Open Fryer Cook Cycle During a product cook cycle, the F5 control system applies heat in a varying duty cycle depending on the oil temperature readings. Generally, full heat is applied for a period at the beginning of a cook cycle to anticipate the effect of product lowering oil temperature.
Henny Penny F5/ LOV 300 Open Fryer Oil Management System (OMS) OMS Purpose Tracking of oil movement along with filter queuing and logic is managed by the OMS PCB. Primar- ily, the OMS is powered by 24 volts DC from the Power Distribution PCB. Additionally, line voltage is supplied to the OMS by two of the 15 A push button circuit breakers.

Henny Penny F5/ LOV 300 Open Fryer Filter System Theory of Operation Purpose Regular filtering of cooking oil maintains quality, extends its life, and improves product quality. Oil filtration processes for the F5 fryer are tracked by the OMS PCB to ensure only one filter oper- ation is performed at a given time.

Henny Penny F5/ LOV 300 Open Fryer Filter System Sequence of Operation Prompts Filter cycles for each vat are initiated through the F5 control panel using different prompts. For Express Filter cycles, the user may be prompted for a filter cycle automatically by the control, or choose to initiate one on their own.
Henny Penny F5/ LOV 300Open Fryer Filter Pan Switch After the user initiates a filter cycle, the F5 control system first checks to verify the filter pan is in place. Filter pan position is confirmed through a circuit from the OMS PCB through a normally open magnetic proximity switch and back to the OMS PCB.
Henny Penny F5/ LOV 300 Open Fryer Drain During the drain sequence, a 24 volt DC signal is sent from the OMS PCB to the drain valve actu- ator which causes the valve to open. With the drain valve open, cooking oil to be filtered flows by gravity from the vat to the drain trough and then to the filter pan.
Henny Penny F5/ LOV 300Open Fryer motor from the output shaft end, rotation will be in the counterclockwise or anticlockwise (CCW or ACW) direction. The filter pump input shaft connects directly to the motor shaft and the pump body is mounted to the motor hub, secured with three (3) set screws.

Henny Penny F5/ LOV 300 Open Fryer Auto Top-Off System Theory of Operation Purpose Maintaining proper oil level in all vats is performed by the Auto Top-Off (ATO) system. With nor- mal use, the oil level in any vat will drop lower due cook and filter cycles. A low oil level will result in reduced oil and product quality, oil life, and ultimately nuisance tripping of the high limit safety system.

Disposal of used cooking oil is necessary whenever a vat is filled with new oil. To properly collect and transport used oil, Henny Penny offers a disposal cart that is inserted under the F5 fryer in place of its filter pan. Timing of disposing used cooking oil is entirely up to the the user with no pre- set schedule programmed into the F5 control system.

Henny Penny F5/ LOV 300 Open Fryer Cart Dispose Sequence of Operation Prompts Dispose to cart sequences are user initiated through the F5 control panel manually. The F5 con- trol system has no provision for automatic prompting of oil dispose sequences. During the on- screen cart dispose control prompts the user is directed to remove the filter pan and then insert the dispose cart.

Bulk oil systems provide the F5 fryer with a method for storing disposed and supplying fresh cook- ing oil. Processes and communication between the external (non-Henny Penny) bulk oil system and the F5 fryer are tracked by the OMS PCB. Bulk oil processes are divided into two types, bulk dispose and bulk supply.

Depending on bulk oil system type and fryer configuration, the flexible dispose oil line will be either supplied by Henny Penny or the bulk oil system vendor. The Henny Penny provided bulk oil dispose line has a female quick disconnect coupling end that must be mated properly to the bulk oil plumbing before disposed oil will flow.
