Sweet or savoury sauces

Basic recipe
Using this basic recipe for sweet or sa-
voury sauces you can develop your own
creations.
Take:
• 60–120 ml of liquid (e. g. carrot juice
or other vegetable juice according to
taste, yoghurt, soya yoghurt, soya milk,
oat milk or cow's milk, tofu (whisk with
30 ml water) or water)
• 120 ml of a creamy ingredient (e. g.
sesame paste (tahini), nut butter, ba-
nana, avocado, milk, tofu, yoghurt, cot-
tage cheese, soft cheese, oil or kafir)
– We recommend: Dr. Urs Hochstrass-
er's almond puree
• 1 handful of fresh or frozen fruit or
vegetables
• 1–2 tsp of spice according to taste
Sauces are also wonderful spooned from
a bowl as soups, just increase the amount
of liquid added. You can thicken the sauce
by reducing the amount of liquid.
Enjoy fruity varieties as well as savoury
ones.
Sweet sauce: apple sauce
• 1 apple (cut into small pieces)
• 1 tsp of pre-soaked flax seeds
• 1 banana
• cinnamon and nutmeg to taste
• lemon juice to taste
Puree to the desired consistency. To blend
the apples hold the mixer with both hands
and shake firmly. As soon as it begins to
blend replace it on the work surface.

Savoury sauce: sweet
and sour sauce
• 80 ml of freshly squeezed orange juice
• 60 ml of maple syrup
• 1 tsp of cider vinegar
• 2 Tbs of olive oil
• 2 Tbs of lime juice
• 2 Tbs of soy sauce
• 1 Tbs of fresh ginger, finely chopped
• 2 tsp of mustard
Puree until the desired consistency is
reached.
Savoury sauce: guacamole
• 1 avocado
• 2 cherry tomatoes (halved)
• 1 Tbs of chopped red onion
• 1 tsp of Mexican spice mix
• lime juice to taste
• sea salt or crystal salt to taste
Pulse until the desired consistency is
reached.
