The operation of the gas flame will cycle automatically from Low Flame to High Flame or OFF as required to maintain the set point temperature.

It is located here to give a true indication of the temperature where the ducks are situated in the oven, unlike a pizza oven which has the thermocouple in the floor to sense the temperature where the pizzas are cooked.

Push the main control switch to ON. Main Control Button illuminated green to show gas system is on.

This is best done by keeping the sliding door down when either cooking or when the oven is not being used.
