SWEET WHIPPED CREAM
Makes 2 cups
INGREDIENTS
1¼ cups chilled thickened cream
2 tablespoons icing sugar
1½ teaspoons pure vanilla extract
METHOD
1. Put all ingredients in a large bowl. Using the whisk attachment, begin
to whip on low speed, being sure the whisk just skims the surface of the
cream.
2. Continue blending on low until cream begins to thicken, then gradual-
ly increase speed to high and move whisk in an up-and-down motion
throughout the bowl until desired stiffness is achieved. Whipped cream
will reach soft peaks between 50 to 60 seconds
