Before filling the vat with frying oil for the first time, purge the oil lines to ensure all
water or mineral oil is removed. Also wipe out the vat to remove dust or other debris.
Turn the unit on.

• Do not use a metal scraper or any type of abrasives to clean
the heating elements.
• Do not attempt to melt a cube of shortening in the frypot.
• Do not use a metal scraper below the crackling ring or any
type of adrasives to clean the interior of the frypot.
• Do not turn on the fryer until the oil level is at least to the
lower fill line.
• KFC standards library instructions for filtering must be
followed.
Failure to follow these procedures will result in severe damage
to the frypot and heating elements causing sticking and burning
of cracklings. The cracklings will not be acceptable for gravy
and oil life will be greatly reduced.
