Lemon & Dill
pizzelle
Yield: 25 pizzelle cookies
Ingredients:
2 eggs
5 tablespoons butter, melted
1 tablespoon fresh dill
1 cup + 2 tablespoons all purpose flour
1 teaspoon baking powder
2 teaspoons lemon zest
¼ teaspoon sea salt
Directions:
1.
Whisk flour, baking powder, salt, lemon zest, and fresh dill together.
2.
Add the melted butter and eggs.
3.
Scoop 1 heaping tablespoon of batter into the Pizzelle Maker and cook until
golden brown, about 1 minute.

Goat Cheese Ricotta
filling
Ingredients:
1 cup ricotta cheese
8 oz goat cheese, room temperature
¼ teaspoon sea salt
zest of one lemon
1 clove garlic, minced
2 tablespoons olive oil
Directions:
1.
Mix ricotta cheese with salt, lemon zest, minced garlic, and olive oil.
2.
Mix in softened goat cheese and add lemon juice, one teaspoon at a time,
if it's too thick.
3.
Serve cannoli style with Lemon & Dill Pizzelle or as a dip.
