The minimum length of delay for each setting is 10 minutes. The delay clock increases and
decreases in 10-minute increments.

How do I know when to add raisins, nuts, etc. to the bread?
The beeper sounds to indicate that you may add raisins, nuts, etc. during the second
kneading cycle. Note: See 'Baking cycle times' chart for 'Add nuts & raisins' time.
In some cases, ingredients can be broken up during the initial kneading cycle. Each recipe
indicates the best time to add fruit and nuts to the dough.
The bread is too moist when done. How do I fix this?
Humidity may affect the dough. Add an extra tablespoon of flour to your ingredients.
High altitude may have a similar result: in this case, decrease the amount of yeast by 1/4
teaspoon, and decrease the sugar and/or water/milk slightly.
Why are there air bubbles at the top of the bread?
This is often caused by too much yeast. Decrease the amount of yeast by 1/4 teaspoon.
Why does the rise and then collapse?
The bread may be rising to much. To reduce the rate of rising, reduce the amount of yeast
and/or increase the amount of salt.
Can I use my own bread recipes (traditional yeast bread) in my bread machine?
Yes, but some experimentation may be needed to get the perfect proportions for the
ingredients. Make yourself familiar with the bread maker by making several loaves
before experimenting with different recipes. Never exceed the maximum of 5 cups of dry
ingredients per loaf (which includes the total amount of flour, oats, oatmeal, bran). Use
the recipes in this book to help determine the ratio of dry ingredients to liquid, as well the
amounts of yeast, sugar, salt and oil/butter/margarine to use.
The recommended setting for creating original recipes is basic mode. Thereafter, feel free to
progress through the other settings, using the 'Baking cycle times' chart as a guide.
Is it important that all ingredients be at room temperature before adding them to the
bread pan?
Yes, even when the delay timer is being used. (Water must be between 21–28°C.)
Why do the loaves vary in weight and height? The wholewheat loaves in particular
are always shorter. Am I doing something wrong?
It is quite normal for wholewheat loaves to be shorter and denser than basic or French
breads. Wholewheat flour is heavier than white bread flour, thus loaves do not rise as much.
This is also true for bread containing fruit, nuts, oats and bran.
Can I premix the yeast with water?
No. The yeast must be kept dry and added to the bread pan last, on top of the flour. This is
especially important when the delay timer is being used.
Why is there a large hole at the base of the loaf?
The hole is created by the kneading blade. The hole may be larger than usual at times as
a result of the dough resting on the side of the blade during the second kneading cycle –
which is normal with all bread makers. Try positioning the dough evenly in the base of the
pan to keep the size of the hole to a minimum.
