Filling
1.
Bottles should be held at an angle against the dispenser tap so that the water
runs down the inside of the bottle.
2.
Bottles should be filled to halfway up the neck of the bottle, for optimum
presentation and to ensure a comfortable release of CO2 when a bottle of spar-
kling Eau de Vie is first opened.
3.
Presentation - wipe all newly filled bottles with a dry cloth to remove any finger
marks.
4.
An illustrated checklist of the bottle preparation procedure is provided for staff
use.
TIP: The best carbonation is achieved by using the coldest water, so always fill sparkling
water bottles of Eau de Vie before still ones, especially when large quantities of bottles
are to be filled.
Unused stocks of filled bottles
Eau de Vie is fresh filtered water. All unused stocks of sparkling water remaining each
day should be consumed or discarded; All unused stocks of still water remaining each
day must be consumed or discarded.
N.B. ln common with all other catering and food/drink processing equipment, legisla-
tion requires that surrounding surfaces be tiled or finished in surfaces that are appro-
priate to catering purposes, and are kept clean and that they are hygienic at all times.
