PreparaLon  
1. Heat   r oaster   t o   3 00°F   d egrees,   a dd   o il.  
2. Add   b acon,   c ook   u nAl   c risp,   a bout   5   m inutes.   R emove   t he  
bacon,   c rumble,   a nd   s et   a side   t o   u se   a s   a   t opping   f or   t he  
peas.  
3. Add   o nion   a nd   s auté   i n   t he   b acon   d rippings   u nAl   t ender.    
4. Add   t he   p eas,   d iced   t omatoes   a nd   g reen   c hilies,   s alt,   c hili  
powder,   p epper   a nd   w ater.    
5. Cover   a nd   c ook   o ver   m edium   h eat   f or   4 5   m inutes   t o   1   h our,  
or   u nAl   t he   p eas   a re   t ender.    
6. Add   a ddiAonal   w ater,   i f   n ecessary.    
7. Serve   g arnished   w ith   c rumbled   b acon.
