IMpORTANT SAfETy INfORMATION IMPORTANT SAFETY INFORMATION When the oven is correctly installed, read this manual carefully before the using the oven. Keep this Manual available to all persons using the oven. Always place trays filled with hot liquid in the bottom runners of the oven chamber to avoid spilling the hot liquid on yourself when you take the tray out of the oven chamber.
IMpORTANT SAfETy INfORMATION Maintenance and repair Maintenance and repair must only be carried out by trained technicians. Only use HOUNÖ pROTECT cleaning detergents, they are specially developed to clean and protect your HOUNÖ combi oven. HOUNÖ pROTECT products are recommended and are available from www.hounoshop.com Note: Ensure the oven drain is clear and free running at all times.

INTRODUCTION C & K Model Ovens The Visual Cooking C & K model ovens have 5 different cooking modes. • Hot Air • CombiSmart ® Cook & Regen • proving • Steaming • B Model Ovens The Visual Cooking B oven has 4 different cooking modes.
USING THE STANDARD DISpLAy USING THE STANDARD DISPLAY The Standard display provides a friendly and easy way for you to operate and interact with the oven. Basic Operations Start/Stop button The start/stop button will start and stop any cooking operations on the oven. Setting the Temperature press the temperature button once, the digits will start flashing, use the wheel to select desired cooking temperature.
USING THE STANDARD DISpLAy Setting the Exhaust (Only available in Hot Air) press the exhaust button once. The green light will be on notifying you that the exhaust is now open. press the exhaust button once again. The light will be off notifying you that the exhaust is now closed.

COOKING MODES CombiSmart ® The CombiSmart function allows you to set an oven temperature and select a humidity level. CombiSmart is recommended for braised products and for poultry. When you use CombiSmart, you minimize shrinkage and improve the appearance and flavour of the products.
COOKING MODES Cook & Regen Cook & Regen allows you to gently regenerate previously prepared products. Use low fan speed, during operation a carefully calculated amount of humidity is added. COOKING MODES Proving pROVING is a function for raising bread by adding humidity at temperatures between 30 and 40°C. These are optimal conditions for the yeast to expand. COOKING MODES Steaming (K & C models) If the oven has been used prior to starting the steaming process, cool down the oven chamber to 20°C below the desired cooking temperature. To achieve best results do not load products until oven has reached set temperature. Note: in K models the temperature of the water in the steam generator is checked automatically.
COOKING MODES Preheat (B models only) The preheat button is only available on B model ovens. The temperature can be set up to 300°C. preheat function will only last for 15 minutes before automatically reducing temperature to 250°C. Note: preheat is available on C & K Models by setting the Hot Air temperature above 250°C pREHEAT will show on the screen instead of HOT AIR.
pROGRAMS PROGRAMS Standard ovens can store up to 50 programmes. Each programme has up to 10 process steps. It is possible to write 10 characters and enter an alarm for each step. Making and using programs press programmes and turn the wheel to select desired program number. Start the programme by pressing Start/Stop button.
pROGRAMS Entering and changing data in steps By pressing when a program is active, the step display will show 1. The data of the first step can now be entered. To move on to the next step press again. Choose desired cooking function then set temperature, time, core temperature, exhaust, humidity and fan speed as in manual operation.
COMBIWASH® COMBIWASH ® We recommend that you clean the oven daily to maintain efficiency and to ensure a high level of sanitation. Located under the front panel is a spray hose you can use to clean the oven after it has cooled down. NOTE: Oven damage due to absence of a necessary HOUNÖ...
ROLL-IN SySTEM ROLL-IN SYSTEM The Roll-in system comes as standard on all 1.16, 1.20 & 2.20 models. The trolley can be removed completely from the oven cabinet and replaced at will. OVEN MAINTENANCE OVEN MAINTENANCE Cleaning the Oven Exterior Use a soft, damp cloth and a liquid detergent to clean the oven cabinet on the outside. 2. Open the inner glass to clean under and around the door. 3. Treat the surface with HOUNÖ STEEL OIL to protect it. The steal oil is available from www.hounoshop.com Note: do not use a water hose or high-pressure cleaner to clean the oven exterior since it may damage parts of the oven including electronic components.

OVEN MAINTENANCE Cleaning the Jet Heads Visual Cooking models you have to clean the jet heads regularly, when you have used CombiSmart and ClimaOptima. This must also be cleaned regularly. The Visual Cooking oven comes with two sets of jet heads. While you clean one set, you can replace them with the other. Unlock the screws to dismount the jet heads.
OVEN MAINTENANCE Cleaning the Air Filter Visual Cooking models The air filter is located below the control panel in front of the spray hose. To remove the filter twist the fingerscrew and pull down. The filter must be cleaned on a weekly basis.
GUIDELINES GUIDELINES User guidelines • The core probe has 3 temperature measuring points. When using the core probe be sure to insert the pin into the product at the thickest point. The oven will always operate from the coolest of the 3 points. Note: When roasting whole chickens put the core probe into the thickest part of the breast.
GUIDELINES Meat with Larger Amounts of Connective Tissue Meats that contain larger amounts of connective tissue, such as shoulder, brisket, and neck, must be slow cooked at low temperatures to make them tender. The holding time should, for example, be 30-90 minutes at a core temperature of 60-75°C. tissue, the more important the holding time becomes.

Generator too hot The temperature of the steam generator is higher than 130°C. If the error recurs, contact authorized personnel to descale.

TROUBLESHOOTING Error Code Problem Possible solution 24V failure There is no 24V AC. The main contactor output is not working. Check fuse f1. 50 / 60* pressure switch active The pressure switch or gas valve input is active when the fan is not running. Try to restart oven.
2. The warranty period can be postponed up to 6 months to start at the instal- lation date. Register the oven at HOUNÖ’s website www.houno.com to validate the extended parts warranty. The unit must be registered within 8 weeks from the date of installation.

SERVICE AND REpAIR 5. The warranty period will not be extended following the performance of war- ranty service nor does it triggera new warranty period. 6. HOUNÖ does not cover transport costs or risks when shipping warranty parts. 7. The warranty does not cover incorrect installation(1). This applies to defects and damage in connection with the use of soiled, aggressive water, sub-stan- dard gas, or electricity with unsuitable voltage or current.
