Thoroughly mix the yoghurt, double cream
and sugar until all the sugar has dissolved,
add the lemon juice and stir in.
Yoghurt & Soft Fruit Ice
100 g strawberries
100 g raspberries
100 g bilberries
250 g natural yoghurt
110 g sugar
Wash the soft fruit, clean it and then puree it
in a blender. Mix the sugar and yoghurt in a
bowl until the sugar has all dissolved. Then
stir in the fruit puree.
Iced Strawberry Soufflé
400 g strawberries
3 egg yolks
60 g sugar
200 g butter-milk
Wash and clean the strawberries and then
puree them in a blender. Slowly heat the
egg yolks and 2 tablespoonfuls of the
strawberry puree in a very small pan until
the mixture becomes crumbly. Beat the egg
mixture and the rest of the puree in a pre-
cooled bowl until an even blend is achieved.
Then stir in the sugar and the butter-milk.
Orange Sorbet
300 g sugar
300 ml water
400 ml orange juice
Mix the water and sugar in a pan and bring
to the boil. Let this syrup cool down to room
temperature, stir in the orange juice and
then put the mixture in the refrigerator to
cool down further.
Variations:
You can also use lemon or grapefruit juice,
or pureed kiwis (in the latter case, add
1 tablespoonful of lemon juice).
Honey and Grapefruit Sorbet
175 g honey
450 ml grapefruit juice
Let the honey become lukewarm in a small
pan over a low heat and stir in
4 tablespoonfuls of the juice. Then combine
this honey mixture with the rest of the juice
in a separate bowl.
Milk Ice
500 ml milk
150 g sugar
3 eggs
200 g whipping cream
With a whisk, mix together the eggs and
sugar in a bowl and stir in the milk. Stirring
constantly, heat the mixture to just below
the boiling point. Do not let it boil. Cool
down to room temperature and mix in the
cream. Then put the mixture in the
refrigerator to cool down further.
Ingredients to Taste
Add for example:
- 1 tablespoonful of cinnamon to the hot
mixture
- 1 tablespoonful of instant coffee
- a little almond essence
Basic Mixture
500 ml milk
4 egg yolks
1 teaspoonful (8 g) cornflour
100 g sugar
Bring the milk to the boil in a pan. Beat the
egg yolks, sugar and cornflour together in a
bowl until the mixture is almost white. Now
pour in the hot milk whilst stirring constantly.
Then put the whole in a pan and heat it until
thickens slightly, but do not let it boil. Finally
let it cool and then put it in the refrigerator.
You can add the following to this basic
mixture:
- 3 pureed bananas (about 350 g)
- 100 g roasted almonds
- 150 g chopped hazelnuts
- 120 g chocolate flakes or granules
