PESTO CHicken Panini
Yield: 2 servings
INGREDIENTS
1 boneless, skinless chicken breast,
pounded thin
6 strips jarred roasted red pepper
4 tbsp jarred pesto sauce
1 handful arugula, washed
DIRECTIONS
Cut the chicken breast in half. Thoroughly cook the chicken on the Flavor Grill. Unplug
the Grill, let it cool, and then wipe down the Cooking Surface with a clean, damp cloth.
Meanwhile, spread the pesto sauce on one side of each bread slice. Top with chicken,
roasted peppers, arugula, and the other bread slices.
Butter the outsides of the sandwiches. Cook in the heated Flavor Grill until paninis are
warm and toasted.
