White Bean Dip
Makes: 2 cups
Preparation: 10 minutes
2 x 400g cans white beans, rinsed, drained
1 teaspoon finely grated lemon rind
2 tablespoons freshly squeezed lemon juice
2 tablespoons olive oil
2 cloves garlic, crushed
Grilled asparagus, to serve
1. P lace all ingredients into the chopper bowl.
Place lid firmly on. Process, scrapping
down side of bowl occasionally, until
smooth.
2. T aste and season with salt. Transfer to a
serving bowl. Serve with grilled asparagus,
if desired.

Peanut Butter
Makes: 1 cup
Preparation: 5 minutes
250g (1½ cups) blanched, roasted peanuts
1. P lace peanuts into chopper bowl and
process for about 2-3 minutes stopping
every 30 seconds to scrape down sides of
bowl.
2. S tore in an airtight container in the
refrigerator for 2 weeks.
