CHICKEN TANDOORI STYLE

large chicken thighs or
drumsticks
1 c. plainnonfatyogurt
1½ c. lemonjuice
2 tsp.salt
1½ tsp.cayenne
1½ tsp.blackpepper
1½ tsp.crushed garlic
1½ tsp.gratedginger
1 tbs.cornoil
Combineall the ingredients in a
large mixing bowl and marinate
the chicken for 8 hours in the
refrigerator.Drain the chicken
and spread on the spit running
the rod on the fleshiersideof the
bone.
Rotisusingthe rotisburner.Cook
on medium high heat for 40
minutesbastingoccasionally with
the remainderof the marinade
mixture.Servewith slicedonions
andlemonwedges.
SPARERIBS
Marinade:
1 c. soysauce
1½ c. honey
1½ c. vinegar
1½ c. drysherry
2 tsp.chopped garlic
2 tsp.sugar
1 c. water
1 chickenbouillon cube
1 canbeerfor bastingsauce
Marinaderibs for 3 hours. Use
marinadefor basting by adding
beer to it. Place pan under the
ribsandbastefrequently. Tocook
ribs select lean, meaty ribs and
accordionpleat them with your
spit. Slide four prongmeat hook
down the length of spit and
tighten. A t thebeginning of the
rack andto its center,penetrate
the secondrib with the pointed
end of the spit and push it
betweenthemeat.Skipa couple
and continuethe processuntil
the entire rack is accordion
pleated.Fasten thesecondmeat
hook into the rack. Turn your
rotisburneron high.Rotisfor 50
minutesor untildone.
PORKROAST
Apple cider vinegar basting
sauce:
1 c. applecidervinegar
6 oz.water
1½ stickbutter
Salt, pepper,parsleyand garlic
seasoning
2 oz.lemonjuice
10Ibs.porkroast
Time:1-1/2hoursto2 hours
Bringpork to room temperature
beforeplacingit on the spit rod.
Place on the rod and test for
balance.Lightrotisburner.Turn
control knob to high. Use the
above basting sauce
for
rotissing.
TURKEY
12lb.turkey
Beerbastingsauce:
1 canbeer
12oz.water
1 stickbutter
1 tsp.salt
1 tsp.pepper
1½ tsp.garlicflakes
1 tsp.parsley
Thawthe birdcompletely. W ash
insideout. Securely tie the legs
and wings. Light rotis burner.
Turn to high. Combineall the
ingredients for bastingsaucein
a shallowpan.Placeit underthe
turkey15to 20 minutes.
