When the griddle is lit turn the heat set-
ting back to ―LOW‖.
After a short while, as the griddle heats, it
likely will discolor with the heat. Colors
range through different shades of blue and
black. This is a normal characteristic of
griddle plates and should be expected.
After approximately 30 minutes, wipe
away the oil and apply a second coat.
Wipe away the excess.
Increase the heat setting at the control
knob 1/8 turn every 15 minutes. Stop at
three quarters of the available knob rota-
tion. Do NOT heat to the maximum set-
ting during the seasoning process.
During normal use if the griddle is not
overheated or food is not allowed to stick
re-seasoning should not be required.
If necessary the seasoning procedure may
be repeated.
Always pre-heat the griddle at least 10
minutes before cooking. Pre-heat on low.
Do NOT pre-heat on high.
Do not bang the griddle plate with metal
cooking utensils. Be careful not to gouge
the griddle plate surface.
Do NOT overheat the griddle. In between
loads turn to a lower setting. Turn off
when not in use.
Allow to cool when done cooking. Scrape
off excess food and wipe off oil coatings.
Do NOT wash griddle plate or it will re-
quire re-seasoning. Apply a new oil coat-
ing and wipe off excess. Do NOT allow
to stand without a new oil coating to pre-
vent rust.
Never flood a hot griddle with cold water.
This may cause the griddle plate to crack
or warp and will void your warranty.
If Griddle is heavily soiled, pour club
soda. slowly onto the griddle. The griddle
should still be slightly warm and the soda
should be room temperature--not cold.

OPERATION
Use a spatula to push debris toward the
grease trap.
ROTISSERIE
Preferred by professional chefs over
other methods, the intense heat is ideal
for searing in the natural juices and nu-
trients found in quality meats.
To use the rotisserie, first mount the mo-
tor on the grill's left side. Place securely
onto the support bracket. To load the
skewer, slide one of the meat forks, with
prongs facing away from the handle,
onto the skewer.

slide the second meat fork into position.
Center the food and forks on the skewer
and tighten the wing nuts on the forks.
Secure any loose food with string, not
plastic. Once the food is secured, place
the sharp end of the skewer into the mo-
tor and rest the skewer on the supports
on either side of the grill. Remove grill
racks if needed to allow the food to ro-
tate freely.
