ASSEMBLY INSTRUCTIONS

Please read all instructions thoroughly before proceeding. Make sure all the plastic packing material is removed before assembling.
Find a large, clean area to assemble your unit. Please refer to the parts list and assembly diagrams as necessary.

The manufacturer has made every effort to eliminate any sharp edges. However, you should handle all components with care to avoid accidental injury.
Some parts may contain sharp edges, especially as noted in these instructions. Wear protective gloves if necessary.

This appliance will be hot during and after use. While cooking, place unit on heat-resistant and flame-resistant surfaces to avoid damage and injury.

Two people are recommended for the assembly of this product.

  1. Place the griddle body (not included) on its back.
    Remove the four (4) M8 flange nuts from the four (4) oven feet.
    Use the four (4) M8 flange nuts to attach the heat shield and four (4) oven feet to the bottom of the griddle body.

  2. Remove the oven body from its packaging and place it on a smooth flat surface.
  3. Remove the four (4) tapping screws from the upper brackets.
    Use the four (4) tapping screws to attach the vent cover to the upper brackets.
  4. Remove the eight (8) M6x12 screws from the oven body side panels.
    Use four (4) M6x12 screws to install one (1) side handle and two (2) mica sheets to the oven body left side panel.
    Repeat with the oven body right side panel.
    Assembly - Step 2

    Do not touch the handle while cooking.
  5. Slide the square stone into the upper oven chamber brackets.
    Center the round stone on the floor of the oven chamber.

  6. Remove the one (1) M5 screw from the door handle. Use the one (1) M5 screw to attach the door handle to the front of the oven door.
  7. With the help of another person, set the pizza oven into the griddle body (not included).
    NOTE: Take extra care not to damage the burners. Do not let the stones slide out.
  8. Tilt the door brake behind the gauge panel and set the oven door assembly in place.

CARE & MAINTENANCE

Regularly clean your appliance between uses, especially after extended periods of storage. In order to extend the life and condition of unit, follow best practices detailed in this manual.

Use insulated oven mitts or gloves when opening oven door or touching the door handle.

The cooking stone surface is hotter than the air.

PIZZA OVEN OPERATION

HOW TO USE YOUR PIZZA OVEN

For best results:

  1. Please reference the Ignition | Pizza Oven chapter for instructions on achieving and maintaining the oven temperature.
  2. Always cook with door closed.
  3. Rotate pizza 90° (a quarter turn) when the cooking time has reached the halfway point.

FRESH PIZZA

  1. Preheat oven to 700°F (380°C).
  2. Pizza cooking time is about 2-4 minutes depending on the size and thickness of the dough of the pizza. Thicker or denser foods require more time.
  3. Pull out the pizza when the crust has reached your desired readiness, or when the edges of the pizza crust are golden-brown.

FROZEN PIZZAS, COOKIES, ETC.

Follow the food manufacture's directions on box/ recipe.

CLEANING YOUR PIZZA OVEN

  • Do not mistake brown or black accumulation of grease and smoke for paint. Interiors of gas ovens are not painted at the factory (and should never be painted). Apply a strong solution of detergent and water, or use an oven cleaner with scrub brush on insides of oven lid and bottom. Rinse and allow to completely air dry.
  • Clean cooking stone simply by brushing off. If desired, wash Pizza Stone with warm water.

NEVER USE SOAP ON THE COOKING STONE. This may penetrate the stone's cooking area and leave a soap taste in food.

IGNITION | PIZZA OVEN


Do not lean over the appliance while lighting.

If ignition does NOT occur in 5 seconds, turn burner controls OFF, wait 5 minutes and repeat lighting procedure.
If burner does not ignite with open valve, gas will continue to flow out of burner and could accidentally/inadvertently ignite with risk of injury.

PROPANE BURNER OPERATION

For proper ignition and operation of the appliance follow the steps below.

  1. To preheat the oven:
    1. Push control knob in to start gas flowing.
    2. Turn the control knob counterclockwise to activate the starter.
    3. Turn the control knob to HIGH.
      Repeat with the other control knob.
  2. Once the desired temperature is reached and you are ready to start baking, turn one (1) control knob to LOW and the other knob to OFF for the duration of the cook time.

RECIPES FOR THE PIZZA OVEN

NEW YORK STYLE PIZZA DOUGH

Serves 9
1 hour 20 min.

Ingredients

  • 4 cups of bread flour
  • 1 and 1/2 cups of warm water
  • 1 teaspoon of instant dry yeast
  • 3 teaspoons of honey
  • 2 teaspoons of salt
  • 4 teaspoons of olive oil

Makes 3 Crusts

  1. Add water, flour, yeast, honey and salt together in a large bowl. (Don't add the oil yet. You want the flour to hydrate first before adding oil.)
    NOTE: Regular sugar should not be substituted for honey. Honey helps yeast grow a little faster but regular sugar (sucrose) has almost no effect on yeast growth.
  2. Mix the dough until most of the flour is incorporated.
  3. Add the oil and knead your dough for 5-10 minutes.
  4. Cover dough and let it rest for 10-15 minutes.
  5. Divide the dough into 3 pieces and round into balls. Wipe the dough balls with oil or cooking spray.
  6. Cover dough balls and let rise for about an hour.

HOW TO STRETCH PIZZA DOUGH

  1. Generously flour your prep surface to prevent sticking and to make the dough easier to work with.
  2. Flatten the dough with the palm of your hand, starting from the center out. Don't use a rolling pin since you want to leave a thicker crust around the edges.
  3. Pick up the dough and put it on the back of your hands. Rotate the dough from hand to hand letting gravity do most of the work stretching it out.

NOTE: An even thickness in the middle and a thicker crust is most important. The toppings will weigh down the center and allow the crust to puff naturally.
NOTE: Use a small amount of flour, semolina, or cornmeal on your pizza peel to prevent sticking when moving the pizza into your oven.

CLASSIC MARGHERITA PIZZA

Serves 3
2-3 min.

Ingredients

  • 1 crust of pizza dough
  • 8 oz. of fresh mozzarella
  • 8 fresh basil leaves
  • 1/2 cup of vine ripened crushed tomatoes or San Marzano tomatoes
  • 1 tablespoon of extra virgin olive oil
  • 1 pinch of sea salt
  1. Preheat oven to 700°F (380°C).
  2. Stretch your pizza dough and add the crushed tomatoes.
  3. Add the fresh mozzarella torn into chunks.
  4. Put fresh basil on top and drizzle with a little olive oil. Sprinkle the top with a little pinch of sea salt if you'd like.
  5. Bake for 2 1/2 minutes (cheese should be melted, and edges should be golden brown).

THAI SWEET CHILI CHICKEN PIZZA

Serves 3
2-3 min.

Ingredients

  • 1 crust of pizza dough
  • 1/2 cup of Sweet chili sauce (we recommend Mae Ploy brand)
  • 1 cup of diced chicken breast (pre-cooked)
  • 1 - 1 1/2 cup of shredded mozzarella cheese
  • 1 tablespoon of chopped cilantro
  • olive oil (to drizzle)
  • 1 cup of Veggie Slaw

Veggie Slaw

  • 1 cup of chopped carrots, broccoli, and cabbage (typically can be bought in a bag pre-chopped)
  • 2 teaspoons of apple cider vinegar
  • 1 teaspoon of sugar
  • 1 teaspoon of oil
  • pinch of salt
  1. Preheat oven to 700°F (380°C).
  2. Mix all Veggie Slaw ingredients together and toss to combine. Set aside and let sit for 5-10 minutes for flavors to combine.
  3. Stretch out your pizza dough and spread the Sweet Chili sauce over it.
  4. Add the diced chicken and sprinkle with a pinch of chopped cilantro.
  5. Add mozzarella cheese and drizzle with a little olive oil.
  6. Bake for 2 1/2 minutes (cheese should be melted, and edges should be golden brown).
  7. Slice pizza and top with Veggie Slaw and more fresh chopped cilantro.

BBQ CHICKEN BACON PIZZA

Serves 3
2-3 min.

Ingredients

  • 1 crust of pizza dough
  • 1/2 cup of BBQ sauce
  • 1 cup of diced chicken breast (pre-cooked)
  • 2 tablespoons of diced red onions
  • 1/4 cup of chopped bacon pieces (pre-cooked)
  • 1 1/2 cups of shredded mozzarella cheese
  1. Preheat oven to 700°F (380°C).
  2. Stretch out your pizza dough and spread the BBQ sauce over it.
  3. Add the diced chicken, red onions, and bacon.
  4. Add the mozzarella cheese.
  5. Bake for 2 1/2 minutes (cheese should be melted, and edges should be golden brown).
