    • The ECOQ-AP is a forced air convention oven with a vented oven cavity. • The air is driven by a 1/6 HP fan motor. Controls • The ECOQ-AP comes with the Lang “Purple” Computerized controls which include: ∗ Pre-Programmable Product Selections. ∗ Independent Shelf Timers for each Shelf.

    15 days of delivery. All packing material should be kept for inspection. Do not return damaged merchandise to Lang Manufacturing Company. File your claim with the carrier.

    Follow the receptacle manufacturer’s instructions when connecting the receptacle to the power supply. 4.2 Oven Voltage The Lang Model EQS oven can be operated on 208 Volts or 240 Volt source. The Amp draw and KW rating at both voltages are listed in the table below. Model...

    6. INITIAL START UP 5.1 PRE-POWER ON After the oven is installed and connected to power, prior to turning on, verify the following: • The door open and closes freely. • All three racks are in the oven correctly • All packing materials have been removed from the inside of the oven.

    7. OPERATION 6.1 GENERAL Convection ovens constantly circulate air over and around the product. This strips away the thin layer of moisture and cool air from around the product allowing heat to penetrate more quickly. Cooking times can be shortened and cooking temperatures can be reduced. To convert standard deck oven recipes, reduce the temperature 50 degrees and the time by 25%.
  • Page 10 7. OPERATION CONT’D "TEMP" When pushed, this button will show the current operating temperature of the oven in the status display. "READ/CLEAR" Pressing this button twice then pressing a Product button instructs the oven to "read back" the times and temperatures for that product button in the status display.
  • Page 11 7. OPERATION CONT’D 6.4 Control Panel Buttons Product Buttons: To select a product, simply push any of the programmed PRODUCT BUTTONS which is labeled for the product you wish to cook. Once a product button is selected, the oven will preheat to the preprogrammed temperature.

OPERATION CONT’D • The MANUAL PROGRAM button is active only when the Status Display shows "EntEr". • To operate the Manual Program feature press the MAN PROG button. • The Status Display will show "000 F". • Select the desired temperature using the Product Buttons 0 through 9 to a maximum of 450 degrees.
  • Page 13 7. OPERATION CONT’D Read/Clear Button cancel shelf: Press the READ/CLEAR button twice then press the shelf to be canceled. The Status Display will show “DOnE" or the next shelf to be done. changing a product selection: The READ/CLEAR button will change the oven from a run mode to "EntEr", allowing the operator to select another product which is programmed at a different temperature.

    8. SEQUENCE OF OPERATION 7.1 POWER ON When power switch is turned on, 208/240 volts is applied to the two transformers. 1.) The 240Volt to 12 Volt transformer, which supplies 12 Volts for the computer board. 2.) The 240 Volt to 24 Volt transformer which supplies 24 volts for the Motor and Element Relays.

    9. MAINTENANCE & CLEANING 8.1 Door Reversal Remove the three Phillips screws located at the back of the oven securing the top to the oven. Remove the top of the oven. Open door and remove 5/8 bolt in the lower right-hand corner of the opening. Remove the 5/8-door pin in the upper left hand corner holding the door to the oven.

    10. TROUBLESHOOTING 9.1 Symptoms What follows is a chart of Symptoms and Possible Causes to aid in diagnosing faults with the oven. Refer to the Symptoms column to locate the type of failure then to the Possible Cause for the items to be checked. To test for a possible cause refer to the TEST section and locate the Possible Cause then refer to test to identify test procedures.
