Exigence – air bain-marie & heat cupboard with heating display option

Controls:
The controls are placed on a removable panel to the right of the unit.
A mechanical thermostat with orange on-off light for the bain-marie well.

A mechanical thermostat with orange on-off light for the ventilated heat cupboard.

A switch with orange light for the heating display option.
o
Commissioning:
Preheatin of the well one hour before use, and the heat cupboard 30 minutes before use.
The heating display should be switched on at the start of service.
Use:
Bain-marie well
Turn the thermostat button to the right, set it to the maximum position. This position maintains the
temperature of food above °63°C which is the minimum temperature defined by the hygiene
department.
This temperature is maintained for 120 minutes, using GN1/1 gastronorme trays, 150 deep.
To maintain this temperature, it is necessary to bring food at a temperature between
+70°C and +80°C. Each gastronorme tray should also be fitted with a lid.
The temperature of the well may be set from 30 to 110 °C.
Heat cupboard
Turn the thermostat button to the right, set it to the maximum position. The temperature can be set
from 30°C to 85°C. The heat cupboard is recommended to store plates. It works with doors closed.
Heating display (option)
Press the switch
Position 0: Off
Position 1: On.
