INSTALLATION GENERAL Environment: Operating Criteria Acceptable Range Ambient Air Temperature 15-40 degrees Celsius Relative Humidity 0-80% Altitude 0-3000 meters Voltage See Electrical Connection Installation of the unit must be accomplished by qualified 2. Cut straps on unit. 1. Cut straps and remove installation personnel working to all applicable local and box. - Page 6 Wire must be suitable for at least 194°F (90°C). Refer to Specification Sheet for all electrical specifications. CLEANING Cleveland strongly recommends the use of liquid tight fit- tings. After installation the unit must be thoroughly cleaned and sanitized prior to cooking.

Manual Tilt Override MANUAL TILT: Cleveland braising pans are equipped with a manual tilt mechanism for raising and lowering the pan. To raise pan, raise the cover and turn the crank clockwise. To lower pan, turn counterclockwise. -

CLEANING INSTRUCTIONS DO NOT HOSE DOWN THIS AREA CARE AND CLEANING Cooking equipment must be cleaned regularly to maintain its fast, efficient cooking performance and to ensure its CLEANING INSTRUCTIONS continued safe, reliable operation. The best time to clean is shortly after each Turn unit off. -
