The devices equipped with core needle probe have, in addition to the MAIN-
TENANCE function described in the previous paragraph, the option to cook at
fixed temperature or in Delta-T mode.

ettIng the cookIng In fIxed temperature mode
Connect the needle probe to the device. Press push-button 1 to turn on the
board display. The maintainer will show the default maintenance temperature
(before switch-on), or the last set temperature. Operate the keys 2 and 3 to
change the temperature.
Press the key 4 to set the core cooking temperature using keys 2 and 3 to
change this temperature.
Press the key 6 to set the cooking chamber temperature using keys 2 and 3
to change this temperature.
Press the key 7 (Start) to start cooking. The maintainer sets to preheating
temperature "PRE" and emits an acoutic signal in the moment in which the
ideal cooking temperature is reached; now you can insert the product to be
cooked.
If the appliance operates with this setting, after being preheated, it cooks the
product at a temperature of 90 ° C until the internal temperature reaches 75
° C. Once this temperature is reached, the maintainer sets to "HOLD" (main-
tenance) at 70 ° C for an indefinite period of time.

ettIng cookIng wIth
The cooking in DT (Delta-T) mode allows cooking by maintaining a constant
difference in temperature between the temperature at the core of the product
and the temperature of the cooking chamber. For best results it is recom-
mended to start this cooking procedure with the appliance at room tempera-
ture.
Connect the needle probe to the device. Press push-button 1 to turn on the
board display. The maintainer will show the default maintenance temperature
(before switch-on), or the last set temperature. Operate the keys 2 and 3 to
change the temperature.
Press the key 4 to set the core cooking temperature using keys 2 and 3 to
change this temperature.
Press the key 5 to set the DT cooking temperature using keys 2 and 3 to
change this temperature.
Insert the product in the maintainer and press the key 7 (Start) to start
cooking. If the appliance operates with this setting, it will cook the product
keeping a constant difference in temperature of 25° C between the core and
the cooking chamber until the internal temperature reaches 75 ° C. Once this
temperature is reached, the maintainer sets to "HOLD" (maintenance) at 70
° C for an indefinite period of time. (FIG. 8)
