SECTION FIVE: USING THE OVEN

BAKE

TIPS FOR BAKE

PREHEATING THE OVEN
Many foods such as meat, poultry,
casseroles, or other long cooking
foods cook well without preheating
the oven. See your recipe for pre–
heating recommendation. Preheating
is achieved in 10 to 15 minutes,
depending on the temperature
setting.
GETTING THE BEST
RESULTS
L
Minimize opening the door:
Use a minute timer.
Use the interior oven lights.
L
Choose the right size utensil: use
the utensil recommended in the
recipe.
L
Store the broiler pans outside
the ovens. An extra pan without
food, affects the browning and
cooking.
L
The type of pan used affects the
browning:
For tender, golden brown
crusts, use light non-stick/
anodized or shiny metal
utensils.
For brown crisp crusts, use
dark non-stick/anodized or
dark, dull metal utensils or
glass bakeware. These may
require lowering the bake
temperature 25˚F.

RACK POSITIONS
One or two racks of food can be cooked in the oven at the same time. Place
racks in the oven before turning it on. Position #2 is the most commonly used
for single rack cooking. See below for recommended rack positions.
I LARGE ELECTRIC MAIN OVEN
#4/#3 Use rack #3 or #4 in combination with rack #1 for double rack baking.
#2 Use this rack when using only one rack, unless it is a large item such as a
turkey. May also be used in combination with rack #4.
#1 Use this rack for a large roast, turkey or any other large food item.
The food on the lower rack position may cook slightly faster than the food on
the upper rack. Rotating foods half-way through the cooking cycle may be
benefical.
I 12" ELECTRIC PROOFING OVEN
#3 Use this rack in combination with rack #1 for double rack cooking.
Stagger utensils for optimal results, sliding food on rack #1 to the rear and
food on rack #3 to the front.
#2 This position is used for most single rack baking.
#1 Use this rack for large items when additional height is needed.
