Take out the meat from refrigerator 1 hour before cooking.
After cooking, out of the oven, let rest the meat 10 min

Add from 2 to 3 spoon of water,of lemon juice or of white
wine.
Cover it with an adequate lid or a plastic wrap
A-4 POULTRY
Prick the skin to avoid the projections.
At the end of cooking, let rest
