ß Transfer to a bowl, cover with cling film, so that it touches the custard to prevent a skin forming and
chill completely for at least 8 hours.
ß Turn the appliance on, remove the cling film and pour the chilled mixture into the freezer bowl and leave
the ice cream to churn, 20-25 minutes.
ß 5 minutes before mixing is completed, add the reserved pecans, and allow them to mix in completely.
ß This will produce a soft ice cream. For a firm ice cream, transfer to an air tight container and place in the
freezer for 2 hours.
