You can use the rotary spit to cook particularly large
roasts, such as rolled up joints or poultry. The meat
becomes crispy and brown.
To ensure that the roast is well browned and cooked
evenly, observe the following points:
Position the roast as close as possible to the centre of
the rotary spit.
Use the clamps to secure the meat at both ends. The
rear clamp must be a minimum of 7 cm from the end
of the roast.
You may also use cooking string to bind the roast.
When spit roasting poultry, bind the ends of the wings
behind the back and secure the thighs to the body.
This prevents the wings from burning.
Pierce the skin on the underside of the wings to allow
the fat to escape.
