PREPARING THE FOOD
To achieve the best quality dehydrated food, follow these guidelines:
- Use high-quality food: Ensure the food is fresh and in good condition.
- Choose tree-ripened fruits: They contain the highest natural sugar content.
- Avoid over-ripe or rotten produce: Remove any bruised or discoloured parts before
dehydrating.
- Pre-treatment: Some fruits like apples, pears and apricots can be pre-treated to slow
vitamin loss and prevent discolouration.
- Wash thoroughly: Clean all food to remove dirt, bacteria and other harmful substances.
- Peeling: Peeling fruits and vegetables are optional but can prevent tough skins after
drying.
- Blanching vegetables: Some vegetables may need to be steamed or blanched due to
their different textures.
