:
The sum of all the extracts (umami) dissolved in the soup stock.
Salt (Std scale):
Default mode for measurement and checking with reference solution.
Soup stocks with less than 6% Brix can be measured by Std scale.
Salt (USr scale):
Sanility scale to be created by the user.
15 types of user scales can be registered.
Creating user scales allows you to measure Salt concentration in undiluted liquids
such as sauces with a Brix of 6% or higher.
User scales can measure up to 28.50%.
Low Sodium Index:
Ratio of how much salt is contained to the total concentration of all soluble solids in the sample.
Low Sodium Index is calculated by Salt ÷ Brix.

used to create the user scales.Use the table below if you like.

Preparation
The instrument is equipped with two types of measurement modes.Factory default is Mode HH.Select the mode according to your preference.
Mode HH...Allows you to quickly measure hot Dashi. Resolution is 0.1%. 
Mode TT...Allows you to perform measurements with less variation in repeated measurements. Resolution 0.1% or 0.01% can be selected.
