When using the Brio, basic safety precautions should always be followed:
- Do not touch hot surfaces. Use handles or knobs.
To prevent electrical shock, do not immerse the cord, plug, or the Brio in water or other liquids. - Do not use the Brio with a damaged cord or plug or after the appliance malfunctions or has been damaged in any manner. Return the appliance to the nearest authorized service facility for examination, repair, or adjustment.
- Close supervision is necessary when any appliance is used near children. This appliance is not for use by persons (including children) with reduced physical, sensory or mental capabilities, or those who lack experience and knowledge, without proper supervision or instruction concerning use of the appliance by a person responsible for their safety.
- The use of other accessories that are not intended to be used with the Brio is not recommended. Doing so may damage the Brio and can cause accidents.
- NOT INTENDED FOR OUTDOOR USE. FOR HOUSEHOLD USE ONLY.
- Do not let the cord hang over the edge of tables or counters or allow it to touch hot surfaces.
- Do not place the Brio on or near hot gas or electric burners, or in a heated oven.
- Extreme caution must be used when moving the Brio.
- To disconnect, turn the Brio off, then remove plug from the wall outlet.
- While air-frying, hot steam is released from the air outlet vent. Keep hands and face away from the steam and from the air outlet vent. Be careful of hot steam and air when removing Trays and Racks.
- Never put the Brio against the wall or other appliances. There should be at least 3 inches of free space around the Brio.
- Do not place anything on top of the Brio.
- Unplug the Brio from the wall outlet when it's not in use and before cleaning. Allow the Brio to cool before cleaning, putting on or taking off parts.
- Keep this manual handy for future reference.
SAVE THESE INSTRUCTIONS
Note: Put the Brio on a horizontal, even, and stable surface. This appliance is intended for normal household use. It is not intended to be used in environments such as the staff kitchens of shops, offices, farms, or other work environments; nor is it intended to be used by guests in hotels, motels, bed and breakfasts, and any other nonresidential environments.
NOTICE: THE FAILURE TO FOLLOW ANY OF THE IMPORTANT SAFEGUARDS, ADDITIONAL SAFEGUARDS, OR THE INSTRUCTIONS FOR SAFE USE IS A MISUSE OF YOUR BRIO THAT CAN VOID YOUR WARRANTY AND CREATE THE RISK OF SERIOUS INJURY.
- Do not place the Brio close to flammable materials, heating units, or use it in wet environments.
- Use only Nuwave-approved parts and accessories with the Brio.
- It is normal for some smoke to escape the Brio when using it for the first time.
- If a lot of smoke is escaping from the air vent during operation, unplug the Brio immediately and contact Customer Service.*
- Extreme caution must be exercised when operating the Brio or any other appliance.
- Do not move the Brio while it is in operation or while it is still hot. Always wait for the Air Fryer to cool down prior to handling it.
- Children should be supervised to ensure that they do not play with the appliance.
- Never allow anything to block the air vents.
- If any trouble arises during operation, any service MUST be done by NuWave LLC.
- The Brio is not intended to be operated by means of an external timer or separate remote-control system.
- Do not disassemble the Brio or replace any parts without the prior written consent of the manufacturer.
- Do not use metal utensils with the coated Base Tray and Rack as doing so can damage the surface.
- Make sure the Brio is always clean prior to cooking.

- Never allow food in the Base Tray to have direct contact with the heating components.
- Never block or cover the air inlet and outlet openings while the appliance is operating.
- Never pour oil into the Base Tray, as this may create a fire hazard.

A short power-supply cord (or detachable powersupply cord) is provided to reduce the risk of becoming entangled in or tripping over a longer cord. Longer detachable power-supply cords or extension cords are available and may be used if care is exercised in their use. If a longer detachable power-supply cord or extension cord is used:
- The marked electrical rating of the extension cord should be at least as great as the electrical rating of the appliance.
- The longer cord should be arranged so that it will not drape over the countertop or tabletop where it could be pulled on or tripped over.
The appliance has a polarized plug (one blade is wider than the other). To reduce the risk of electric shock, this plug is intended to fit into a polarized outlet only one way. If the plug does not fit fully into the outlet, reverse the plug. If it still does not fit, contact a qualified electrician. Do not attempt to modify the plug in any way. If the appliance is of the grounded type, the cord set or extension cord should be a grounding-type 3-wire cord.

ASSEMBLY GUIDE
Assembling the Device

DO NOT use the Brio without the Base Tray.
DO NOT touch the inside of the Base Tray, the Reversible Rack, or the Riser immediately after cooking. These parts will be hot. ONLY hold the Base Tray by the handle.
Removing the Base Tray & Air Circulation Riser
- Using the handle, pull the Base Tray straight out.

- Allow the Base Tray to cool. Grasp the Circulation Riser by the central handle and pull it straight up to remove it from the Base Tray.

Function Buttons
: The Power button turns the Brio on and off and stops all cooking functions.
To switch from Fahrenheit to Celsius: Press SEAR + TEMP arrow. Repeat to change it back.
START/PAUSE: When the START/PAUSE button is pressed, the Brio starts or pauses cooking.
To mute and unmute the Brio: The SEAR + STAGE button combination is used to mute and unmute the Brio's beeping sounds for quiet operation, if desired.
UP & DOWN Arrows: Use the arrow buttons to adjust the cooking temperatures and times.
PREHEAT: Preheats the Brio before cooking. Press the PREHEAT button at any time and it will stop.
Auto Preheat: The Brio will preheat automatically by default. To cancel the Auto Preheat, press MENU + PREHEAT.
SEAR: The SEAR button is used to cook at high temperatures for a short period of time. Use the SEAR button to sear foods directly before and/or after the regular cooking cycle. Use the Up and Down arrows to adjust the temperature and time (up to 30-minutes) before or during the searing cycle.
REHEAT: Quickly warm or reheat your favorite leftovers. 350F for 4 minutes are the defaults. To reheat, press and hold down REHEAT for 1 second. The Brio will begin automatically.
WARM: Use the WARM button to keep your food warm after cooking, or when you simply want to keep something warm for an extended amount of time. Use the Up and Down arrows to adjust the warming temperature and warming time. Press the WARM button to cancel the warm cycle.
DELAY: Set your temp and time. Press DELAY and press up or down arrows to adjust delay time. Adjustable up to 24 hours. After setting the cooking function and delay time press START/PAUSE. Press DELAY at any time to cancel.
MENU: The Brio comes with 100 pre-programed presets and an additional 50 memory slots allowing you to add your own unique recipes. Use the MENU button to recall and save the programmed recipes. Refer to the Quick Start Guide for the list of 100 presets.
STAGE: Use the STAGE button to program up to 5 different cooking steps. Cooking temperatures and times can be adjusted for each stage of cooking using the Up and Down arrows.
WATTS: The Brio comes with 3 wattage levels (700, 1500 & 1800). Press the WATTS button to change the running wattage the Brio will use. When the Brio is turned off and/or unplugged, the Brio will run at the wattage previously used when it is once again plugged in and turned on.
The maximum selectable cooking time differs depending on the selected cooking temperature.

INSTRUCTIONS
GENERAL USE
Getting Started
Plug the power cord into an electrical outlet.
- Press the Power button to turn the Brio on and off and to cancel.
- Insert your food into the Base Tray and slide it into the Brio.
- Adjust the temperature and time by pressing the Up and Down arrows.
- The default cooking time and temperature is 15-minutes at 350F.
- Press the START/ PAUSE button to begin cooking.
START/PAUSE
Press the START/PAUSE button to begin cooking.
To pause cooking, press the START/PAUSE button or simply remove the Base Tray.
- The screen will display "Open" when the Base Tray is removed. It will continue cooking once it's closed. Once the Brio finishes cooking, the LED display will show "End" and beep three times.
Mute and unmute the beep sounds.
To mute the beep sounds, press and hold the SEAR + STAGE buttons for 1 second. The Brio will remain mute until it is unmuted. Press SEAR + STAGE for 1 second again to unmute.
Adjust the cooking temperatures
- To set a different cooking temperature, press the Up and Down arrows above and below the temperature icon.
- The temperature will adjust in 5-degree increments between 50F and 400F.
- You can quickly adjust the temperatures by holding down the Up and Down arrows.
Note: The cooking temperature can be adjusted at any time before or during the cooking process. The current set temperature will be displayed. To display the time, press the TIME button.
Adjust the cooking times
- To set a different cooking time, press the Up and Down arrows above and below the time icon.
- The time will adjust in 1-minute increments.
- You can quickly adjust the cooking time by holding down the Up and Down arrows.
Note: The cooking time can be adjusted at any time before or during the cooking process. The Brio will beep 3 times half-way through the cooking cycle to alert you to remove the Base Tray from the Brio and shake the food (or flip foods like chicken, steak, or fish). Then reinsert the Base Tray to finish cooking.
PREHEAT
Preheat the Brio prior to cooking your food. Once the set temperature has reached, the Brio will beep twice and display "Ready", telling you preheat has finished and to insert your food to start cooking.
- Press PREHEAT.
- Adjust the preheat temperature with the temperature Up and Down arrows.
- Press the START/ PAUSE button to begin preheating.
- During preheat the cooking temperature can be adjusted.
- The preheat cycle can be canceled anytime by pressing PREHEAT again.
- Place your food into the Base Tray and slide it back into the Brio.
- Adjust the cooking temperature and time with the Up and Down arrows.
- The Brio will begin cooking with the set temperature and time.
- When the Brio is finished cooking the LED display will show "End" and beep 3 times.
Auto preheat
Once you have set your cooking temperature and time, press START/ PAUSE, the Brio will automatically preheat to 350F. After preheating, the Brio will cook at the set cooking temperature and cooking time.
- You can adjust the Automatic Preheat temperature at any time by pressing the Up and Down arrows.
- You can turn the Automatic Preheat off or on again by pressing MENU + PREHEAT at the same time.
- Temperature range is 50F-400F.
REHEAT
Quickly warms or reheats your favorite leftovers at 350F for 4 minutes.
- Press the REHEAT button.
- Adjust the temperature and time by using the Up and Down arrows.
- Press the START/ PAUSE button.
WARM
Keeps your food warm after cooking at 140F.
- Adjust the cooking temperature and time with the Up and Down arrows.
- Press the WARM button.
- Adjust the WARM temperature with the Up and Down arrows.
- Press START/PAUSE.
- The Brio will start cooking with the set cooking temperature and time. After that, it will warm at the set warm temperature.
SEAR
Use the SEAR button to sear foods directly before and/or after the regular cooking cycle, up to 30 minutes.
- Press SEAR.
- Adjust the sear temperature and time using the Up and Down arrows.
- Insert your food.
- Press START/PAUSE
Note: You can adjust the temperature and time at any time.
DELAY
The Delay function is used to delay your cooking start time.
Press the Up and Down arrows to adjust the temperature and time.
- Press ON/OFF.
- Press DELAY.
- The Delay time can be adjusted up to 24 hours (24:00).
- During Delay the (:) will flash, indicating the delay time countdown has started.
- To stop the Delay function at any time press DELAY. The unit will end the delay cycle and move on to the next cooking function.
- After the Delay time has elapsed, the unit will automatically move on to the next cooking function.
- Once the Brio finishes cooking your food, "End" will be displayed and the unit will beep three times.
MENU
Use the MENU button to choose 100 programmed presets. Reference the Quick Start Guide for the full list. Slots 101~150 are for your own unique programs. Please refernce Advanced Settings for this.
- Press the MENU button.
- Use either set of the Up and Down arrows to scroll through the program numbers until you find the desired program.
- Once the program number is chosen, press the START/ PAUSE button to begin cooking. You can make temperature and time adjustments, if desired.
- You can view the currently cooking program number while the program is running by pressing the MENU button.
View the cooking settings.
You can view all cooking functions associated with a program before or during the cooking process.
View the cooking settings before the cooking process.
- Press the MENU button and find the program number to review using the Up and Down arrows.
- Once the program number shows in the LED display, press the STAGE button to review each phase of cooking.
- Adjustments to the temperature and time can be made for each function at this time.
View the cooking settings during the cooking process.
- Press the STAGE button to review each cooking phase.
- Continue to press the STAGE button to scroll through all programmed functions for that program number. See example above.
- Adjustments to the temperature and time can be made for each function at this time.
ADVANCED SETTINGS
Using WARM independently
Keeps your food warm for an extended period of time at 140F. To cancel the Warm function at any time, simply press the WARM button.
- Press and hold the WARM button for 1 second.
- The Brio will automatically begin to warm your food at 140F. The Brio will cook at the programmed settings.
- You can adjust the warming temperature and time using the Up and Down arrows.
- When the Brio has finished warming, the LED display will show "End" and beep 3 times.
Note: The Warm temperature can only be adjusted up to 200F. The time can be adjusted up to 3 hours.
Using WARM with MENU
Select your preset and have the Brio warm your food.
- Press MENU.
- Select your desired preset (1-100).
- Press the WARM button.
- Adjust the temperature and time using the Up and Down arrows.
- Press START/PAUSE
- You can adjust the Warm temperature and time at any time.
- Press WARM at any time to cancel.
STAGE
The STAGE button gives you the ability to cook your food at different temperatures throughout the cooking process. You can define up to five 5 different cooking stages. Example: You can set your steak at 400F for 10 minutes, have it switch to 350F for 20 minutes, and then have the Brio cook at a lower temperature for the remainder of the cooking process
- Press the STAGE button. This is Stage 1.
- Adjust the cooking temperature and time using the Up and Down arrows.
- Press the STAGE button a second time to add Stage 2.
- Adjust the cooking temperature and time using the Up and Down arrows.
- Once the program number shows in the LED display, press the STAGE button to review each phase of that cooking program.
- Press the START/ PAUSE button to begin cooking with your set cooking stages.
- You can see and adjust the upcoming cooking stage(s) during the cooking process by pressing STAGE.
MENU
Store your own cooking preset
The Brio allows you to store your own cooking presets.
- Adjust the cooking temperature and time using the Up and Down arrows.
- Press the START/ PAUSE button to begin cooking.
- Press and hold the MENU button for 1 second. The LED display will show "Menu" and "101".
- Use the Up and Down arrows to save your settings between slots 101-150.
- Press and hold the MENU button for 1 second to store and save the new preset. The preset is now available for future recall.
- The Brio will continue to cook, but this time at the new stored preset.
Note: You can also store a preset AFTER the cooking process. Once the cooking process has finished, hold the MENU button for 1 second. The display will show "menu" and "101". Select the slot to store and press MENU again to store.
Editing a stored preset
You can edit a stored preset you created before or during the cooking process and save any changes.
Edit before Cooking
- Press the MENU button and find the preset number to edit using the Up and Down arrows.
- Scroll and locate the stored setting by continuously pressing MENU.
- Using the Up and Down arrows, make the edits to the temperature and time as desired.
- Once all of your edits are made, press and hold the MENU button for 1 second. The LED display will show "prog" and "101."
- Use the Up and Down arrows to find the program number to save your edits to.
- Press the MENU button again to save and store the edits.
Edit during cooking
- While cooking, press the STAGE button until the function you would like to edit shows in the LED display.
- Use the Up and Down arrows to adjust the cooking temperature and time.
- If there are more cooking presets that you would like to edit, press the STAGE button until you reach the preset you would like to edit and make the changes.
- The Brio will continue the cooking process with the edits that you have made.
- When cooking has finished, the Brio will beep three (3) times and the LED display will show "End" followed by "Save," which indicates that there has been a change in the program settings during cooking.
Note: Once the cooking process has finished, the preset is no longer editable. If you have already saved the changes to a program number while cooking, there is nothing more you need to do. The edited program is available for further recall.
If you saved a preset to a filled memory slot, the new preset will override the previous one. Any edits to a preset program (1~100) can only be saved and stored into program numbers 101~150. You cannot save an adjusted preset program to its original preset program number.
SEAR
Sear 1 is ONLY applied to the beginning of the cooking process. Sear 2 is ONLY applied to the end of the cooking process.
Sear 1
The default Sear 1 temperature is 400F, and the default Sear 1 time is five (5) minutes.
- Adjust your cooking temperature and time using the Up and Down arrows.
- Press the SEAR button. This will engage the Sear 1 function.
- Adjust the temperature using the Up and Down arrows.
- 400F and 30 minutes are the maximum settings.
- Press the START/ PAUSE button to begin cooking, "Sear 1" and ":" will be flashing.
- Once the Sear 1 cycle is finished, the Brio will automatically go into the regular cooking temperature and time set on step 1.
- When the Brio has finished cooking, the LED display will show "End" and beep 3 times.
Sear 1 & 2
Sear 1 & 2 is used to sear before and after cooking process.
- Adjust your cooking temperature and time using the Up and Down arrows.
- Press the SEAR button. This will engage the Sear 1 function.
- Press the SEAR button again.
- Adjust the Sear 2 temperature and time, if desired.
- Press the START/ PAUSE button to begin cooking at the set sear time with "Sear 1" and ":" flashing.
- Once Sear 1 is finished, the Brio will automatically go into the regular cooking temperature and time set on step 1. It will then go into Sear 2.
- When the Brio has finished cooking, the LED display will show "End" and beep 3 times.
Sear 2
Sear 2 is used to sear after the cooking process. The default temperature and time are 400F and five (5) minutes.
- Adjust your cooking temperature and time using the Up and Down arrows.
- Press the SEAR button 3 times. This will engage the Sear 2 function.
- Adjust your cooking temperature and time using the Up and Down arrows.
- 400F and 30 minutes are the maximum settings.
- Press the START/ PAUSE button to begin cooking.
- Once the cooking process has finished, the Brio will beep 1 time and automatically go into Sear 2 cooking. The set sear time with the "Sear 2" and ":" will be flashing.
- When the Brio is finished cooking, the LED display will show "End" and beep 3 times.
CLEANING & MAINTENANCE
Cleaning
Clean the Brio after every use or in between batches. The Base Tray and Air Circulation Riser have a non-stick coating. Do not use metal utensils or harsh abrasives when cleaning as these can damage the coating.
- Unplug the appliance and make sure it cools completely.
- Use a damp cloth to wipe the outside of the appliance.
- Clean the Base Tray and inside components with a nonabrasive sponge, hot water, and mild detergent.
Note: Remove the Base Tray and place it on a heatresistant surface to help cool the appliance faster. If using the dishwasher for the Base Tray, Air Circulation Riser, and Rack, use the top rack only.
Tip: If there is residual food on the Base Tray, Air Circulation Riser, and Rack, add some hot water and let them soak separately for about 10 minutes for easier cleaning. Then, use a soft cleaning brush to remove any lingering food.
Storage
- Unplug the Brio and let it cool down completely.
- Make sure that all the parts are clean and dry.
- Push the power cord into the storage capsule. Affix the cord by inserting it into the cord-affixing opening in the back of the Brio.

Do not immerse the Brio in water or attempt to cycle the appliance through the dishwasher. The outer surface may be cleaned by wiping carefully with a damp dishcloth or sponge.

Cleaning Silicone Tabs
The Air Circulation Riser comes with 4 Silicone Tabs. You may need to clean the tabs as residue might accumulate.
- Let the Air Circulation Riser cool.
- Grasp the Air Circulation Riser by the central handle and pull it straight up to remove it from the Base Tray.
- Carefully pull the Silicone Tabs up to slide them off the metal tabs, then pull each of them out.
Note:Wash the Air Circulation Riser and Silicone Tabs with soapy warm water and sponge. The Air Circulation Riser can be washed in a dishwasher, top rack only. Do not wash the Silicone Tabs in the dishwasher. Wait for the Air Circulation Riser to completely cool off before washing.

TROUBLESHOOT GUIDE
The Brio is not turning on or working. |
- The Brio is not plugged in.
- You did not press the Power button.
- The Base Tray is not in the Brio.
Insert the plug into an appropriate grounded power socket. Press the Power button. Place the Base Tray into the Brio. |
The ingredients fried in the Base Tray are not completely cooked. |
- Too many ingredients were used. The cooking temperature is too low.
- The cooking time is too short.
Remove some ingredients from the Base Tray; smaller batches air-fry more evenly. Cook at a higher temperature. Set the Brio to air-fry for a longer time. |
The food is fried unevenly. |
- Certain types of ingredients need to be shaken halfway through the cooking time.
Ingredients that are on the top need to be shaken halfway through the cooking time. |
Fried snacks are not crispy when they come out of the Brio. |
- You used a type of snack meant to be prepared in a traditional deep fryer.
Use snacks designed to be baked in a traditional oven, or lightly brush some olive oil onto the snacks before placing them into Brio for crispier results. |
Cannot properly slide the Base Tray into the appliance. |
- The Base Tray is overfilled.
Do not fill the Base Tray more than 4/5 full. Push the Base Tray into the Brio until you hear a click. |
White smoke is coming out of the Brio. |
- You are frying greasy foods.
- The Base Tray and Rack contains greasy residue from previous uses.
When preparing greasy ingredients in the air fryer, large amounts of oil can smoke and cover the Base Tray. The oil will produce white smoke and the Base Tray might become hotter than usual. This will not affect the final cooking result. White smoke is caused by grease heating up in the Base Tray. Make sure you clean the Base Tray, Riser and Rack properly after each use. |
French fries are fried unevenly in the Brio. |
- You did not soak the potato sticks properly before airfrying them.
- You did not use the right potato type, or they were not fresh.
Soak the potato sticks in a bowl of water for at least 30 minutes, remove them, and dry them with paper towels. Use fresh potatoes and make sure they stay firm during air-frying. |
French fries are not crispy when they come out of the Brio. |
- The crispiness of the fries depends on the amount of oil and water in the fries.
Make sure you dry the potato sticks properly before adding oil. Cut the potato sticks smaller and dry them for a crispier result. Put slightly more oil on the potatoes before placing them in the Brio for crispier results. |
