SEQUENCE OF OPERATION

This sequence of operation is written for Vulcan-Hart
electric Cook and Hold Ovens with either 208/240
Volts or 120 Volts.

Cook Cycle Sequence

1.
Conditions:
Power ON/OFF rocker switch OFF
Roasting Time Timer dial set to -0-
Roasting and Holding Temperature
Thermostats both set to the lowest dash
under the temperature setting
Oven Door closed
Unit connected to a power source and
properly grounded
2.
Place the oven Power ON/OFF Rocker Switch ON:
Red Holding Temperature Indicator Light will
illuminate.
The Blower Motor turns ON.

NOTE: Control Power Module Cooling Fan(s) come
on only if required to cool the electrical compartment.
3.
Set the Roasting Time Timer dial to 1.5 (1 hour
and 30 minutes cooking time):
The Holding Temperature Indicator Light
goes out.
4.
Set the Holding Temperature Thermostat knob
to 140°F (60°C).
5.
Set the Roasting Temperature Thermostat knob
to 225°F (107°C).
The Roasting Temperature Indicator Light
illuminates.
NOTE: The oven will automatically switch from the
roasting cycle to the holding cycle when the Roasting
Time Timer reaches -0-.
