It is very important to understand that the entire inner surface of the tank works as a heat exchanger.
As a result, the temperatures of the water to be used are very different from the standards used in the wine industry.
For this reason,
in general it is not recommended to use the existing temperature control circuit in the cellars.
Do not use:
-
temperature control circuit with empty vats.
-
brine water to regulate the temperature of the vats.
-
water with a temperature below 10°C or above 35°C.
When filling the tank, the temperature difference between the tank (=room temperature of the cellar) and the grapes
/ wort / wine must not be higher than 10°C. Should this be the case, cool or heat the liquid.
Failure to comply with these instructions may lead to a significant risk of cracking of the tank due to the temperature
difference between the refrigerant and the concrete.
CONTROLLING THE PRESSURE
GALILEO vats are not designed to support pressure or high vacuum inside the vat. For this reason, it is equipped with a
valve gauged at 0.1 bar
to avoid accidental pressure differences. This valve allows to regulate the differences in pressure and
to prevent serious cracking issues. Periodically check the correct operation of the safety valve.
Never:
-
close the hatch without this safety valve installed.
-
remove the safety valve.
-
block this valve or replace it with plugs or any other element preventing free depressurization of the tank.
-
fill or drain the tank without having first opened the upper hatch.
Instructions to staff  it must be cleaned on a regular basis (ball system could lock / stick if not maintained) and
IMMEDIATELY
reposition the valve on the hatch after cleaning.
If wort enters the valve while using the tank , it must be washed and repositioned
sugar could stick the inner ball and no longer allow normal decompression.
Failure to comply with these instructions may lead to a significant risk of structural damage and make the vats
unusable.
CLEANING AND DISINFECTING THE TANK AFTER USE
1) Descale with a strong alkali of a soda type, washing the walls within a closed circuit.
2) Disinfect with a strong, broad-spectrum oxidant, be sure to follow manufacturer's recommendations carefully.
3) Flush the vat out and perform a pH paper test.
4) Carry out a fresh treatment with a tartaric acid solution: 3 sprayings at 24-hour intervals (complete drying out.)
The use of steam should be avoided, since this is highly likely to crack the concrete.
For any cleaning, disinfection, rinsing, etc. always use the appropriate protective equipment according to the safety
conditions.
VAT STORAGE CONDITIONS
1) Install the vat in an area without excess humidity (RH ≤ 80%) in order to avoid mould.
2) Put the vat out of direct contact with sunlight, as heat can weaken the vat and degrade the exterior paintwork.
3) Avoid changes of temperature (higher than 10°C) and keep the vat between +10°C and + 35°C.
4) Avoid installing vat outside to prevent it being exposed to extreme temperatures, which could cause thermal shocks,
and cracking.
