    About Dry Ager Use your Everest product according to its intended functions. Warranty is void if the following guidelines are not met. What is Dry Aging? Dry aging is a process in which meats are exposed to circulated air under refrigerated conditions for a certain period (typically weeks), which enhances the maturation of meats.
  • Page 4 Where can meat be purchased for Dry Aging? You can purchase meat from any butcher shop and wholesale or retail stores. If the meat already comes packaged (vacuum-sealed, paper-wrapped, etc.), simply remove the original packaging before aging. Keep in mind that the meat should be fresh and free from contamination before it is placed inside the Dry Ager.

    Hydrocarbon Guidelines This section applies to R290 Hydrocarbon units only. To identify the refrigerant type, see the data plate in the cabinet interior. WARNING - THIS UNIT USES R290, A HYDROCARBON, PROPANE REFRIGERANT THAT IS ENVIRONMENTALLY FRIENDLY BUT IS ALSO HIGHLY FLAMMABLE AND EXPLOSIVE. PLEASE READ THIS MANUAL CAREFULLY AND FOLLOW ALL SAFETY PRECAUTIONS CONTAINED HEREIN TO AVOID THE RISK OF FIRE OR EXPLOSION.
  • Page 6 PROPANE (R290) IS HIGHLY APPROVED FOR USE AS A REFRIGERANT IN COMMERCIAL, SELF-CONTAINED UNITS IN THE US UNDER LIMITED USE CONDITIONS. IT CAN ONLY BE USED IN NEW EQUIPMENT. BACKFITTING OR MODIFICATIONS OF OLD EQUIPMENT ARE NOT ALLOWED. IT MUST BE CHARGED IN A STRICTLY LIMITED VOLUME OF UP TO 150 GRAMS (5.3 OZ) PER REFRIGERATION CIRCUIT.

    Installation Instructions This section applies to all Everest products. Correct installation ensures proper performance and longevity of your appliance. Professional installation by a trained refrigeration technician and electrician is recommended. Warranty is void if the following guidelines are not met. 1.

  • Page 11 Dry Aging Fan and Air Circulation Guide Everest Dry Ager & Thawing Refrigerators are equipped with dual sets of interior fans. The first set is the standard evaporator fan for cooling/refrigeration. The second set is the Dry Ager fan designed to enhance the Dry-Aging process.

If your product is an R290 refrigerator model, you may skip this section. This section applies to all Everest products.
