    The cutlery must be brought into a thoroughly hygienic condition before rinsing in the GS 310 (for example, by washing it in a dishwasher). Rinsing in the GS 310 cleans salts and other residues from water off of the cutlery so that it can dry without spots and needs no more polishing.

  • Page 5 The machine must be entirely connected to the electrical power mains and the fresh water supply and waste water drain system. The electrical safety system must be tested and fully functional. A Winterhalter customer service technical performs the initial start-up. In the process, the operator of the machine is instructed in how the machine works.

    Keep the immersion bath up to heat for approx. 30 minutes if possible and then let it cool to approx. 40° C. Clean the cutlery with a brush and wash it in the dishwasher. Then it can be rinsed in the GS 310 cutlery rinsing machine.

  • Page 8 Cleaning agent is unnecessary because the cutlery has to be washed in a dishwasher beforehand and is only rinsed in the GS 310. Do not open the door while the program is running. Hot water could splash out of the ma- chine.

    Before rinsing Open the stop valve on the water supply. Switch on the main switch provided by the customer. Filter system check: Open the door. Check whether the filter cassette and flat filter have been inserted properly. Check that there are no bits of paper or the like in the interior. Close the door.
  • Page 10 If the DOS indicator on the machine's operating panel lights up, you must add rinse aid. Only use rinse aid that is designed for commercial dishwashers. We recommend using products developed by Winterhalter Gastronom. These are espe- cially designed for Winterhalter Gastronom dishwashers.

    Rinsing Please note the following when you put cutlery into the baskets: • The cutlery has to have been washed in a dishwasher. • Put the cutlery into the cutlery baskets loosely and sorted, with the handles pointing down. 7.1 Rinsing with Program 1 Push the filled rack into the machine and close the door.
  • Page 12 7.2 Rinsing with Program 2 Press the function key (Key 9), to gain access to Program 2 (Key 10). Now Program 2 (Key 10) is available in addition to Program 1 (Key 6). Now the temperatures will be indicated as well. Press the key (10) to preselect Program 2.

    Each day after rinsing 8.1 Empty tank; self-cleaning program Take all cutlery out of the machine. Close the door. Press down the function key (2) and hold it down for three seconds to start the self- cleaning program. The function key will flash. Now the tank water in the rinsing space will circulate for a while before it is pumped out.

    To keep the machine functional for a long time, it should be cared for at regular intervals. In addition, we recommend have Winterhalter customer service overhaul the machine twice each year. Do not spray the machine with a high-pressure or steam jet cleaning unit.

    You can remedy minor malfunctions yourself. See the following table. If you cannot remedy the fault, please get in touch with the responsible Winterhalter customer service. Do not open any panels or parts of the machine if you need a tool to do so. You may get an electric shock.

    10.2 Malfunctions calling for the Winterhalter customer service red flashing light: the temperature in the boiler or the tank is higher than 95° C. Warning, hot surface! Switch off machine immediately. The fault symbol will appear (3) and the fault code Err 2 or Err 3. Switch off the main switch.
