  • Page 6 CLEANING ENSURE THE GAS SUPPLY MATCHES THE KETTLE'S REQUIREMENTS AS STATED ON THE RATING LABEL. After installation the kettle must be thoroughly cleaned and sanitized prior to cooking.     OPERATING INSTRUCTIONS 1. Tilting Handle - Used for tilting the kettle. 2. Vacuum/Pressure Gauge - Indicates steam pressure and vacuum. 3. Pressure Relief Valve - Pressure safety device. 4. Heat Indicator Light (Green) - Cycles ON-OFF with burner. 5. Low Water Indicator Light (Red) - When lit, indicates a low water condition.

If unit will not hold a vacuum the most likely cause is a leak at one of the fittings. Often, the easiest way to eliminate a leak is reseal the suspect areas.
