During the first use of the new appli-
ance a small quantity of smoke may
develop. This is due to technical rea-
sons and no cause to worry.
Grilling
Separate the food in pieces which
are not too big and which have a
thickness of 1 cm maximum.
Season the food before grilling and
salt it afterwards to better retain its
juice. Sausages, tender steaks, minced
steaks, meat loaf or fish are most
suitable for grilling. Tomatoes,
aubergines and pineapples cut in
slices can be prepared very well and
are especially tasty.
Pierce fat sausages before putting
them on the grill stone to avoid fat
spitting. The duration of grilling
depends on the kind and thickness
of the food. Make sure to turn it a
couple of times during grilling.
Never cut meat or other food on the
grill top.
Preparing a raclette meal
200 - 300 grams of raclette cheese
per person are used for a typical
Swiss raclette meal.
The kinds of cheese that are best
suited are Swiss Emmentaler,
Appenzeller, German Emmentaler,
Tilsiter, Gouda medium aged,

Edamer and others with a minimum
fat content of 45 % and a low con-
tent of water.
Main side-dishes are potatoes boiled
in their jacket. Pearl onions and
gherkins can be served also.
Smoked meat a la „Bündner" or
other smoked meats, salami or other
tasty sausages go together well with
the cheese.
Cut the cheese in 5 mm slices. Put
one slice in a pan and as soon as
the pan is in the appliance the cheese
will begin to melt.
When a golden-brown colour is achie-
ved put the cheese over the potatoes.

Cleaning and maintenance

Unplug the appliance and let it cool
down. Left-overs that stick to the
baking surface can be removed with
a cloth while the pan is still hot.
Caution - scalding danger!
The pans as well as the grill top
should be cleaned after every use in
hot water with washing-up liquid and
a washing-up brush.
Do not use scouring agents, metal
sponges or oven cleaners. The pans
and the grill top are dishwasher-proof.
Never immerse the basic appliance
in water nor treat it with water. Just
wipe with a damp cloth and a small
quantity of washing-up liquid and rub
dry afterwards.
Recipes
Basic Raclette Recipe
Potatoes if possible of the same size
are washed and brushed. Cook
them in salt water afterwards. Serve
them peeled or with skin.
Let the cheese slices melt in the pan
and pour it over the potatoe halves.
Add pepper from a pepper mill.
Serve with pearl onions, pickled
gherkins, smoked meat a la Bündner
or raw ham.
Ratatouille Raclette
Wash 250 g zucchinis, 250 g auber-
gines, 1 beef tomato, 1 red or green
pepper. Skin the tomato, remove the
pips from the pepper and cut them
into small cubes. Peel some cloves
of garlic and chop finely. Heat 3
tablespoons of oil in a pan and fry
the vegetables gently together with
the garlic until they are soft. Add salt
and pepper to taste.
Put the hot vegetables into the
raclette pans and allow the cheese
to melt. Serve with baguette.
Mushroom Raclette
Steam finely chopped mushrooms
with some butter in the pans.
Salt the mushrooms and cover them
with a slice of cheese. Put the pans
into the raclette and let the cheese
melt. Then put some pepper on
them and serve with baguette.
Pear Raclette
Marinate tinned pears that are cut
into cubes with pear brandy for half
an hour. Then warm it up in the pans
and allow the cheese to melt on the
pears. Serve with grated almonds.
Fillet Hawai
Grill small 1 cm thick steaks on both
sides. At the same time grill one
slice of pineapple for each fillet on
one side. Put one slice of pineapple
on each fillet with the grilled side up.
Put an olive in the center of each
pineapple slice. Serve with baguette.
