What to do if
... steam is escaping between the lid and the pot ?
This means either that the rubber gasket is defective or the pot is not properly
closed. Replace the defective rubber gasket. Close the pot correctly (see chapter
"Closing the Pressure Cooker"). If the rubber gasket is just dirty, it should be
washed.
... no steam is coming out of the pressure regulating valve ?
This means that the pot is not correctly sealed and this should be checked. If
the pressure regulating valve is dirty, the valve should be cleaned. Check also
whether there is sufficient liquid in the pot. There may be not enough pressure
in the pot. Carefully readjust the energy supply as needed. If the rubber gasket
is dirty or defective, clean or replace it. The rubber gasket will need replacing
once a year.
... too much steam is escaping from the pressure valve?
The heat source is probably turned up too high and should be turned down.
It could also mean that the pressure regulating valve is dirty.

Basil pesto
2 bn basil
1 bn parsley
30 g pine nuts
10 g Parmesan, grated
Roast the pine nuts in a pan without oil and let cool immediately. Coarsely chop
the herbs and put them with 1-2 pressed garlic cloves into a tall, narrow mea-
suring cup. Add the pine nuts and the Parmesan to the mixed herbs and purée
briefly with olive oil at a high setting. Add salt and pepper to taste.
Chickpea mousse
250 g chickpeas, soaked
2 tbsp sesame oil
3 tbsp olive oil
2 tbsp orange juice
Cover the chickpeas with water in the pressure cooker, bring to a boil and ladle
off the foam. Close the pressure cooker, boil at a high setting on high pressure
(setting II) and reduce the heat when steam begins to escape. The pressure val-
ve closes and the chickpeas cook for about 12 min. Purée the cooked chickpeas
in the pressure cooker with the oils and spices until a creamy paste forms. Finish
by mixing in finely chopped mint.
