76 mm (3") Locking Casters
76 mm (3") locking casters are available for the one, two, and
three-drawer freestanding units in place of the legs. Add 4 mm
(3/16") to Height (C) in Dimensions section. Use the following
procedure to install casters onto the bottom of the unit.
NOTICE
Do not lay unit on the front or back side or damage to the
unit could occur.
1. Remove any pans from the drawers of the unit.
2. Carefully lay the unit on its left or right side (requires two
people).
3. Remove the legs, if installed.
4. Install the caster into a hole where a leg was removed.
Tighten securely.
Installing 76 mm (3") Casters
5. Repeat steps 3 and 4 for the remaining three casters.
6. Return the unit to the upright position (requires two
people).
51 mm (2") Locking Casters
51 mm (2") diameter locking casters are available for one, two,
and three drawer freestanding units. Subtract 37 mm (1-1/2")
from Height (C) in Dimensions section.
102 mm (4") Locking Casters
102 mm (4") diameter locking casters are available for one,
two, three, and four drawer freestanding units. Subtract
22 mm (7/8") from Height (C) in Dimensions section for 4
drawer models.
127 mm (5") Locking Casters
127 mm (5") diameter locking casters are available for one, two,
three, and four drawer freestanding units. Add 5 mm (3/16") to
Height (C) in Dimensions section for 4 drawer models.
6" (152 mm) Adjustable Legs
152 mm (6") stainless steel adjustable legs are available for
one, two, three, and four drawer freestanding units. Add 0 mm
(0") to Height (C) in Dimensions section for 4 drawer models.
Oversized Drawer
An oversized drawer and pan is available as a factory installed
option. The pan measures 508 x 381 x 127 mm (20"W x 15"D
x 5"H).
Biscuit Drawer
A biscuit drawer is available as a factory installed option. Biscuit
drawers accommodate two 457 x 330 mm (18"W x 13"D) half-
size sheet pans (pans not included).

Accessory stainless steel food pans are available in various
sizes.
ALUM PAN: Half-size sheet pan at 457 x 330 mm (18"W x 13"D)
ST PAN 2: Full size stainless steel pan at 64 mm (2-1/2") deep

ST PAN 4: Full size stainless steel pan at 102 mm (4") deep —

Stainless Steel Food Pans
Water/Spillage Pan
The water/spillage pan fits in the drawer underneath the
food pan and can be used to humidify the heating area
or keep spillage from the cabinet interior. A Splash baffle is
recommended for use with a water/spillage pan.
Splash Baffle
The splash baffle is used with the optional water/spillage pan.
Fabricated of stainless steel, the baffle fits into the bottom of
the water/spillage pan, over the water bath. The splash baffle
prevents water from splashing into the cabinet interior when
opening and closing a drawer, while allowing humidity to
escape.
Chip Guard
The chip guard completely shields the heating element,
preventing any food product, such as tortilla chips, from coming
in contact with the heating element.
Trivet
A trivet (HDW-TRIVET) raises food product 51 mm (1/2") off the
bottom of a full size food pan.
