Smokey Chipotle Beef Brisket BBQ Sliders
Making delicious BBQ beef in the pressure cooker is a snap and it takes about
quarter of the time. People will request this as it is a great make ahead to bring to
your next potluck or family get together.
3 pounds beef brisket cut into 4 pieces
salt and pepper to taste
2 tablespoons olive oil
2 onions chopped
1 poblano pepper chopped + 1 Italian frying pepper chopped or 2 green bell
peppers chopped
4 cloves of garlic chopped
4 chipotle chilies in adobo more or less to taste + 2 tablespoons of the
adobo sauce
1 cup tomato puree
1 cup beef stock or broth
3 tablespoons cider vinegar
1 teaspoon ground cumin
2 tablespoons brown sugar
2 - 3 dozen slider rolls
• Generously season the pieces of beef with salt and pepper. Over medium high
heat add the 2 tablespoons of olive oil to the pressure cooker pot and sear the
beef in 2 batches on all sides until well browned 10 - 12 minutes and remove to a
plate and set aside.
• Add the onions and peppers to the pot and cook stirring now and then for 5
minutes and add the garlic and cook for 30 more seconds.
• Add the beef back to the pot and add the chipotles, adobo, tomato puree, beef
stock, cider vinegar, cumin and brown sugar and place the top on the pressure
cooker and cook on high pressure for 1 hour and turn off the heat. Let sit for 30
minutes with the lid on. Carefully remove the lid and let sit for 15 more minutes
to cool a bit more.
• The beef should shred with the touch of a fork. Shred all the beef and mix with
the sauce from the pot and serve on slider rolls.
• This beef is packed with flavor and really needs no other accompaniment
except the slider rolls.
Prep Time: 10 - 15 minutes
Cooking Time: 1 hour and 15 minutes, plus 45 minutes resting time
Serves: 16 (2 sliders per person) or 38 sliders
