BANANA BREAD
Yield: 2 loaves
Preheat oven to 350°F
¾ cup sugar
½ cup butter or margarine, softened
1 cup (2 medium) ripe bananas, mashed
⅓ cup milk
1 teaspoon vanilla
2 eggs
1. In large bowl, combine sugar and butter; beat until light and fluffy. Add 2 eggs; beat well. Add
bananas, milk, and vanilla; blend well.
2. In small bowl, combine flour, baking soda, salt, and nuts. Mix well. Add dry mixture to banana
mixture. Stir just until dry ingredients are moist. Do not over mix.
3. Pour into (2) greased 8" x 4" loaf pans. Bake at 350°F for 20–25 minutes or until toothpick
inserted into center comes out clean. Cool 5 minutes in pan, and then remove from pan. Cool
completely, wrap tightly, and store in refrigerator.
