Once meat and vegetables are cooked add Wok King
Finishing Sauce over ingredients, cook for one minute, and turn burner off, by first turning the
regulator control valve off and then turn the LP tank valve off. Wearing insulated outdoor cooking
gloves/mitts remove wok from heat and serve and enjoy!

added during cooking. They are specially formulated to add their distinctive, delicious flavor at the very
end of the cooking process and you don't want to leave them on the heat too long. Wok and food are
extremely hot!
Step 9 Cooking Instructions for Deep-Fried Turkey
Step 9.1 Turkey Preparation
Eastman Outdoors 30-quart turkey pots and burner can be used to cook poultry weighing up to 18
pounds. Turkey or chicken must be completely thawed inside and out. Remove neck, giblets, and pop-
up timer, if present. Trim away all excess fat. Make sure opening around neck is clear. Wash poultry
and completely towel dry inside and out.
Always properly thaw turkey and chicken. Do not stuff before deep frying.
Do not use a kitchen stove for frying turkey or other types of poultry.
Step 9.2 Flavor Injection
The marinade injector is designed for injecting marinades into turkeys and
other poultry. See figure 41 for suggested places where marinade should
be injected for optimum flavor distribution. Lift skin of poultry and insert
needle completely into meat under the skin rather than through it. This
keeps marinade and juices from leaking out of the bird, as the skin is
seared over the meat, it seals in the flavor. For maximum flavor, re-insert
needle into meat in several directions in the same hole so marinade is
injected into different areas of the meat. Use approximately 1 oz. of
marinade per pound of poultry. Once marinated, poultry is ready to be
cooked or placed back in refrigerator for extra flavor.
Step 9.3 Oil Preperation
Determine correct amount of oil to use by following Step 3.1. Eastman Outdoors marked a maximum fill
line on the cooking vessel for the maximum amount oil allowed for this cooking vessel. If the amount
of oil determined from Step 3.1 exceeds the maximum fill line, fill cooking vessel up to
maximum fill line. Never fill vessel above MAXIMUM FILL LEVEL.
When ready to begin cooking, with burner off and cooking vessel placed off to the side of burner, add
oil into the cooking vessel until it reaches the noted fill line or maximum fill line. The best cooking oils
are those with high flash points.
Step 9.4 Deep Frying Instructions
Light burner and place cooking vessel on the burner. Do not place anything on burner that weighs more
than 75 lbs. Make sure cooking vessel is centered on burner. Use Eastman Outdoors' Deep Fry
